Slow Cooker Whole Chicken and Pasta

I always buy whole chicken, organic at Costco or from my local farmer, because it is much cheaper than buying chicken parts. All my boys LOVE my grandma’s slow cooker chicken noodle soup and last time Alex went to Costco, he got a 2 pack of organic whole chickens. I had one left in a freezer and decided to try making slow cooker whole chicken with rosemary, lemon, garlic and pasta. All magic happens right in a slow cooker. Hear me out how. No, I didn’t cook pasta for 8 hours in…

Lemon Dill Shrimp, Zucchini & Peas in 15 Minutes

What a great true summer weekend we have had! How was yours? On Friday temperatures have soared up to +30s C and we couldn’t get enough. I went for a walk (Friday night) and run (Saturday morning which was dumb-dumb because of cottonwood allergies and crazy heat) on the dykes. Hit the farmer’s market (kids lost iPad privileges permanently) and fireworks with the family on Saturday. And on Sunday we cleaned up the yard and spent afternoon till sunset at the lake. At home I had a glass…

Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Like lemon mint vinaigrette in this coleslaw with brown rice elbow macaroni, corn and edamame. It was delicious, crunchy and refreshing! A few years ago I started to develop acne along my jaw line. Acne I never had before. Apparently it is common among adult women. I also felt my hormones were completely out of whack around ovulation and period times, where as all…

Lemon Mint Dressing

I would be lying if I said I meant this dream-of-my-past-2-months lemon mint dressing to come out this colour. Growing up in Ukraine I remember eating this colour mashed split peas with liver patties at government subsidized daycare. I hated daycare only for that reason and will never forget that meal! So, unfortunately my dreamy delicious lemon mint vinaigrette came out the most vicious colour… But I learnt a long time ago that healthy food is not always the prettiest which doesn’t mean it isn’t delicious. And we definitely shouldn’t focus…

Chickpea and Avocado Garden Salad

I have been waiting almost a whole year to post this chickpea avocado salad because it tastes best with vegetables straight from your garden or farmer’s market in my case.:) A typical Ukrainian (Russian) salad consists of most common summer produce in Ukraine – tomatoes, cucumbers and onions. Salt and black pepper are a must! We didn’t grow red onions but white and green ones. As a kid, I hated onions and my kids are the same. They pick onions out from their plates as me and Alex…

Lemon Zucchini Muffins

These Lemon Zucchini Muffins were light, lemony and so moist. Made with whole wheat flour, plain yogurt and zucchini. Extremely delicious! For this recipe I got inspired from my neighbour who makes this recipe every summer. Of course, my end result ended up being a completely different thing.:) Aren’t many of us known for that?!

Lemon Blueberry Overnight Smoothie Jars

One day I got tired of Overnight Oats and Chia Pudding, and thought “What if I combine both and soak them in a flavoured smoothie?!”. I came from an evening walk and whipped these up in 5 minutes. Honestly, these breakfast jars were amazing! Even my kids ate them for a snack no problem and it is not easy to feed them chia pudding. Really depends on a flavour and consistency.

How to Make Lemon Water

I recently started drinking warm lemon water first thing in the morning. I have been buying a bag of organic lemons for Alex for a few years now and wouldn’t join the club because I was too much of a coffee addict – I had to have a cup as soon as my eyes have opened. There was no way I would drink a glass of lemon water before caffeinating my blood stream. Since I quit coffee back in August, which felt similar to quitting smoking a few…

Lemon Blueberry Chia Pudding

Who buys a bag of lemons? My husband. I buy bananas by tens of lbs. Together we look like two zookeepers. In reality, we are a normal North American family who buys food in bulk, loads it in a trunk, hauls it home and stuffs the fridge and pantry like there is no tomorrow. I had to ask for a permission to borrow a few lemons from Alex for this blueberry chia pudding. Crazy but we have our own “Do not touch my food” items. Do you? It’s way…

Healthy Lemon Blueberry Muffins

Healthy muffins with whole wheat flour, chia seeds, vanilla yogurt, blueberries and fresh lemons. For me, healthy muffins do not come from a grocery store or Starbucks. Even if the tag says “healthy”. An absence of sprinkles and presence of icing doesn’t mean healthy either. My healthy muffins mean no refined sugar, no canola/vegetable oil and at least 50% of whole grain/gluten free flour. Healthy food => clean food => whole food. If I use white flour, I make sure it’s organic and makes up not more than…
