Slow Cooker Turkey Meatloaf

What I like about this slow cooker turkey meatloaf is that it’s lower on meat but rather is “beefed up” with red lentils, and contains zero breadcrumbs that are successfully replaced by oats. I love substituting some of the meat with lentils or beans in traditional recipes (on my to do list is half lentils bolognese sauce) because they help cut back on meat for health and budget reasons.

Slow Cooker Vegetarian Lentil Soup

This slow cooker vegetarian lentil soup is made only with vegetables, and is perfect for real life when your fridge drawers have to be cleaned out and you wish you could just throw everything in a crock pot and go to work. If you leave house early, you can prepare all ingredients in the evening and just plug in the slow cooker in the morning. And with this kind of lentil soup, the longer it cooks, the better it gets – potatoes and lentils get their chance to…

Thai Mango Curry with Lentils

Ataulfo mangoes are on special in every grocery store in May, $7-10 a box. Also known as champagne mango, smaller in size than “regular” (Tommy Atkins) mango, and of bright yellow colour, Ataulfo mango is very sweet and might become your new go-to mango. It’s exquisite. Whether in a mango slaw or tuna salad with avocado, champagne mango is not just for dessert. The base of this Thai mango curry consists of usual suspects – onions and Thai curry paste, just like in Thai shrimp curry recipe (where squash adds sweetness similar…

Lentil Casserole with Mushrooms

It is still much of a lentil casserole season in Vancouver despite almost mid-April. It rains, the air is warm and cherry blossoms are almost here, but it’s not quite a spring we are used to in PNW. I do not mind cloudy skies because it means comfort food cooking without sweating in the kitchen, and probably because we just got back from such a long time in the sun. I didn’t get tired from the sunshine but heat is very exhausting, makes you wanna do nothing, and I’m…

Red Lentil Vegetable Soup with Two Spices

It was raining all week. Which I didn’t mind because I could finally bake and cook. On Wednesday I made a huge pot of this red lentil vegetable soup that lasted 2 days. Many of you might not know but I grew up with a single mom who had/has insomnia and anxiety issues. So, most days she was and still is not feeling well enough to do any normal daily activities that so many of us take for granted. On many of those days I heard her say “Let’s…

Slow Cooker Chicken Lentil Soup

You know how some recipes have stories?! My story behind this to-die-for Tex Mex flavoured slow cooker chicken lentil soup with corn unfolded as following. Friday is my day off. Well, I mean a day off from being a blogger. Moms are really never off, let’s be real. Friday is the day when I do chores piled up over a week. So, this Friday a chore was painting doors and trims. I’m slowly refreshing all of them throughout the house. Yes, I love painting and handyman work. Alex jokes…

Green Lentil Curry

This green lentil curry made with green lentils, coconut milk, tomato paste and spices is an old-old recipe of mine that was screaming for picture makeovers. I also re-tested it to make stovetop and slow cooker friendly. So, you have 2 options depending whether you want to come back home to “an Indian restaurant” or rather quickly whip it up on a stovetop while sipping on a glass of wine and listening to Frank Sinatra. The latter is my favourite way to cook (sans wine most times of course)…

Healthy Salmon Burger Recipe

I finally perfected a healthy salmon burger recipe and burgers were to die for! Like those wild salmon burgers from Costco but even better. The best part that homemade burgers contain all ingredients I have control over: wild sockeye salmon (use any, especially affordable pink would be great), red lentils, Dijon mustard, parsley, onions blah-blah-blah. All organic, fresh and the way I like it. Not that Costco salmon burgers are the worst, they are not. In fact, let’s face it – we all gotta eat, at the end of the day. If…

88 Superfood Salad Recipes

I LOVE salads! Everyone who knows me in person knows that. I always get asked to bring salads to any gathering. You should love salads too – often cheap, fridge cleaning and waist friendly (if you don’t add a cup of mayo or ranch dressing). This post was so much fun as I don’t remember last time I got to sit on a couch, browse recipes, look at pretty food and just copy paste titles and links all day long. I have included only healthy superfood salad recipes for…

Lentil Chili with Smoked Paprika

Lentils were on my mind since past weekend, again thanks to the food bloggers conference. Canadian Lentils was the official sponsor and as you can imagine, we had lentils for breakfast, lunch and dinner. Literally. Surprisingly, upon my return home I cooked more lentils. That tells me I like lentils. A few years ago, lentils captured me mostly with their dirt cheap price, and that’s organic green lentils I’m talking about. Spinach lentil soup recipe from my Italian neighbour was my first time I ever tried lentils. Since then I…
