Kombucha Smoothie

Kombucha smoothie. No, I’m not kidding. Think of a root beer float, just instead of ice cream – pureed with creamy almond milk frozen fruit, and in place of pop – kombucha. The same sweet treat floating in a fizzy drink but healthy. And it literally takes 3-4 ingredients, blender and 2 minutes and. Perfection for summer and a breath of fresh air in a tired smoothie world. Don’t you think?! Did you think I would just stop with my “kombucha business”?! I’m literally obsessed, especially during hot…

Thai Mango Curry with Lentils

Ataulfo mangoes are on special in every grocery store in May, $7-10 a box. Also known as champagne mango, smaller in size than “regular” (Tommy Atkins) mango, and of bright yellow colour, Ataulfo mango is very sweet and might become your new go-to mango. It’s exquisite. Whether in a mango slaw or tuna salad with avocado, champagne mango is not just for dessert. The base of this Thai mango curry consists of usual suspects – onions and Thai curry paste, just like in Thai shrimp curry recipe (where squash adds sweetness similar…

Tuna Salad With Avocado and Mango

Yes, I went there – I took tuna salad and loaded it with a bunch of fruit, drizzled with tangy homemade full fat yogurt dressing and added a big handful of dill. Now I can enjoy more than just canned salmon salad recipe. Here is my beef with canned tuna – it is dry and flavourless. I’m not like my 10 year old who can eat tuna straight from the can, I think it is bizarre. I buy a 6 pack of tuna (see my healthy Costco shopping list) for kids’…

Mango Lassi Smoothie Bowl

Why acai smoothie bowls? Why not a mango lassi smoothie bowl topped with all my tropical favourites: Nature’s Path Coconut Chia organic granola, goji berries, coconut flakes, Brazilian nuts and kiwi. I have to confess I have never made a smoothie bowl in my life. However, as part of my healthy path journey I’m trying to step outside of my comfort zone. And it is true – if you want to be healthy not “on” and “off” you have to incorporate new types of meals and foods otherwise…

Mango Slaw

I finally got around to make Healthy Salmon Burger Recipe which I topped with this Mango Slaw, and which I promised to share when I posted Black Bean Zucchini Burger. This week we eat everything mango because I grabbed a box for $10 at Costco. Mangoes are on a Clean Fifteen List so I do not bother buying organic as we peel them anyways. Saving wherever I can to buy organic meat and dairy. My kids absolutely love fresh mango and I love adding to dishes like Thai Mango Curry with lentils, Tuna…

Coconut Mango Ice Cream

Ice cream and dark chocolate are my 2 favourite desserts! Last summer I bought my first ice cream maker (very simple one – it might be louder but I don’t make ice cream often enough to justify spending $70 on an ice cream maker) and started making my own healthy ice cream. I was a bit sceptical if kids would love this coconut mango ice cream since the taste is so coconut-y but they did! Since then, I have added healthy chocolate ice cream, vegan vanilla ice cream, mixed berry ice cream…

Strawberry Mango Salsa Recipe

A dip with tortilla chips or a fish taco topping, this sweet and spicy Strawberry Mango Salsa is delicious! A perfect combination of sweet, spicy and fresh. Strawberry season is in a full swing and since we are getting bikini ready, dessert making kinda shouldn’t be happening. But don’t worry, there are so many other ways to enjoy fresh berries and fruit besides smothering them with pounds of heavy cream and sugar.

Mango, Chickpeas and Feta Roasted Yams Salad

If you don’t like yams or sweet potatoes, listen before you give up on them completely. The same story with squash – I didn’t care for it until Stovetop Squash Mac and Cheese happened. That pillowy soft sauce is addictive by the spoon, straight from the blender. Read the comments. Neither did I like yams until the last camping trip, when Christie pan fried them with oil, garlic and salt. They caramelized and became my favourite dessert for dinner. Seriously! And that’s exactly how I cooked my yams for this…
