One Pan Tex Mex Chicken and Zucchini

This chicken and zucchini is a variation of my black bean quinoa casserole with added chicken for a protein boost and quinoa replaced by zucchini. Everything is cooked within 30 minutes, right in one pan. Tender chicken breast, soft black beans, sweet corn and zucchini, which is added at the very end to preserve the crunchiness.  

Black Bean and Rice Burritos

Holy burritos, I have burnt 8 out of 10 fingers while figuring out how to roll a whole wheat tortilla without breaking it! I completely understand why there are so many recipes with white flour tortillas but those recipes are not for us. No need for them either as I managed to roll these babies up good enough for freezing and my boys not giving me looks what’s on their plate. And these black bean and rice burritos were delicious, filled with all plant-based goodness!

Quesadillas makes a quick lunch or dinner. I found a way to make them healthier with sprouted whole grain tortillas, only 2 tbsp of cheese and stuff as many veggies as I can. Creamy Mexican Kale Salad

Oh, this Mexican kale salad is sooo good! Hearty and crunchy salad, where veggies are “swimming” in a cilantro avocado dressing. Kale, black beans, corn and tomatoes combined with a bit of jalapenos for a heat kick, red onion, cilantro and tossed in a tangy, creamy with a cumin flavour punch dressing.
