Almond Breakfast Smoothie

I find breakfast the most boring meal of the day. And I think it is not only me because health world has embraced chia pudding, egg quinoa muffins and smoothie bowls with a big fat “welcome”. If you are not health conscious you can grab a size of your head muffin at a bakery in your office building, order an egg sausage sandwich at the nearest drive thru or eat a bowl of sugary cereal. 3-4 bucks and you are done. Sigh, that is easy but is not an option…

Apple Oatmeal Bars with Honey

Well, hello, honey! Raw unpasteurized honey drizzled on top of crumbled pecans, covering juicy Granny Smith apples and moist oat and whole wheat crust. Delicious Fall inspired Apple Oatmeal Bars that remind me of Bear Paws cookies. You know those?! Moist and soft and for some reason my kids never liked them back in a day I used to buy store bought cookies. I loved them though, so this clean eating version of a soft bar hits the spot. Each Apple Oatmeal Bar contains only 1 tablespoon of sugar…

Pumpkin Blondies

Melt in your mouth pumpkin blondies on the menu this week! Fudgy, moist, rich and made without flour or eggs. I’m NOT joining a tribe of cooking weirdness, I promise, but I love to mix things up in my diet to keep it more balanced. Yes, you guessed it right – blondies with chickpeas. Aha. I promise there is 3 out of 150% chickpea taste in them. Test on the pickiest husband/boyfriend, if you have one. Mine will eat anything, even recipe tests I don’t like, Alex loves…

Baked Oatmeal Muffins

This baked oatmeal in a form of convenient pre-portioned grab and go breakfast is not only delicious, Clean Eating approved, vegan but also is super easy. I guarantee you have all ingredients on hand to make these baked oatmeal muffins right now. I also made 2 versions: one with mashed bananas (just yellow ripe ones, no need to wait for them to turn brown) and another one with unsweetened applesauce. Both super delicious!

Clean Eating Snickers Oat Bars

Snickers, Mars, Bounty, Kit Kat and Twix chocolate bars have a special place in my heart. When I was 10, my mom went to England to study for a month. I stayed with grandma in Ukraine and needless to say was crossing out days on a calendar. When mom came back, she brought me a pair of my 1st high heel girl’s shoes (black, lacquer; I wished my feet stopped growing) and a bunch of chocolate bars. Among them was Snickers. It was my first time trying a chocolate bar…

No Bake Thumbprint Snack Cookies

These are great snack cookies because they contain only 1 tbsp of maple syrup per entire batch. Eating these No Bake Thumbprint Cookies would be equivalent to toasting an oat cake (if it existed), spreading with coconut oil and almond butter, and then sprinkling with raw shelled hemp seeds. Since learning that hemp hearts contain very few carbs compared to flax and chia, I have been liberally sprinkling them on my toasted brown rice cakes smothered with almond butter. So, that is where inspiration for cookies comes from.

Blueberry Oatmeal Crumble Bars

I have been waiting all winter long to make crumb bars, cobblers and crisps thinking fresh blueberries, strawberries and raspberries come spring time… Ironically, knowing what I know now, EWG in one report finding 38 various pesticides on strawberries and raspberries that DO NOT wash off with water, I ended up baking these blueberry oatmeal crumble bars with frozen blueberries LOL. Organic fresh berries in May in Vancouver are not that affordable, frozen – twice cheaper.

Lemon Blueberry Overnight Smoothie Jars

One day I got tired of Overnight Oats and Chia Pudding, and thought “What if I combine both and soak them in a flavoured smoothie?!”. I came from an evening walk and whipped these up in 5 minutes. Honestly, these breakfast jars were amazing! Even my kids ate them for a snack no problem and it is not easy to feed them chia pudding. Really depends on a flavour and consistency.

Carrot Oatmeal Muffins

I have been craving carrot oatmeal muffins for weeks. Since I always have bags and bags of organic carrots on hand, this recipe was a no special grocery store trip. These days I cook with organic ingredients I purchased at a reasonable price rather than a recipe idea out of the blue. Eating seasonal makes eating 90% organic possible. And you can’t beat a 2 lbs bag of carrots for $2, can’t you?! Even Walmart carries organic carrots. I also found lemons, bananas, fresh herbs and different salad greens…

Mini Green Frittatas

OK, these might not be the most appetizing muffins you have ever seen but they are delicious! I’m posting my Green Frittatas anyways.:) I have said it before and will say it again – people are too hung up on the way food looks! I can tell it from my own experience when I know a recipe with cheese goes viral and Green Smoothie is barely getting repins.
