Carrot Oatmeal Muffins

I have been craving carrot oatmeal muffins for weeks. Since I always have bags and bags of organic carrots on hand, this recipe was a no special grocery store trip. These days I cook with organic ingredients I purchased at a reasonable price rather than a recipe idea out of the blue. Eating seasonal makes eating 90% organic possible. And you can’t beat a 2 lbs bag of carrots for $2, can’t you?! Even Walmart carries organic carrots. I also found lemons, bananas, fresh herbs and different salad greens…

Mini Green Frittatas

OK, these might not be the most appetizing muffins you have ever seen but they are delicious! I’m posting my Green Frittatas anyways.:) I have said it before and will say it again – people are too hung up on the way food looks! I can tell it from my own experience when I know a recipe with cheese goes viral and Green Smoothie is barely getting repins.

Overnight Superfoods Oat Parfait

Although I do not commute to work, I love waking up to already made breakfast. No, Alex doesn’t cook me breakfasts, they cook themselves in the fridge or in the oven the night before. My cooking inspiration is just not there until about 10 AM. And when eating clean, preparation is key for breakfast and snacks. I have already tried chia pudding and overnight oats. I have also tested awesome overnight breakfast quinoa which I will share soon. This week we are eating these overnight parfaits made with…

Clean Eating Gluten Free Applesauce Waffles

I gotta admit that breakfast in my house can be boring if I don’t plan in advance. And many times I don’t. And frankly, lately my kids have been eating a lot of Nature’s Path cereals. Just because it’s life but giving them organic, whole grain and low in sugar cereal makes me feel better. I just got caught up in a Holiday rush of things and finally it’s over. Hallelujah. I don’t know how you feel but I need a vacation. To make and freeze a large…

Gluten Free Cranberry Orange Cookies

Last week I was craving lighter, nutty and full of season’s flavour cookies. Similar to Cranberry Thumbprint Cookies I made last year. I was craving the taste of baked ground almonds in my mouth. Luckily I’m my own boss when it comes to food where as Alex and kids have to eat what I make. Right after dinner, I quickly went through my kitchen’s supplies and 40 minutes later I had these delicious gluten free cookies. Delicate, airy and super moist. The next day I took a few for my…

Chocolate Quinoa Granola

For the past few weeks, I have been in a baking mood. Since Canadian Thanksgiving was last month, end November marks Christmas baking for me (absolutely new concept to a Ukrainian immigrant which I happily adopted). After dropping off kids at school and daycare (thank goodness for those establishments), I turn on Frank Sinatra radio, my oven and am having a blast making the biggest mess in my kitchen! Cooking is my therapy and lately I have added Christmas crafting to the list. Wine, cooking and crafting…I know……

Banana Oat Bars

These banana oat bars is another favourite quick breakfast of mine. I have quite a collection by now, which you can check out under Breakfast category. These bars are also very similar to Banana Protein Oatmeal Cups but without protein powder. I love having oats for breakfast because they are not wheat (everything in moderation) and cook quickly. I usually would pour boiling water over quick oats for a few minutes, then top with yogurt and fruits. These banana oatmeal bars are a baked alternative to traditional oatmeal. Naturally sweetened with…

Flourless Pumpkin Muffins with Coconut

These vegan flourless pumpkin muffins are nothing less than a nutrition powerhouse and are only naturally sweetened (and I’m not talking about maple syrup). Skip the drive through or a bowl of sugary cereal, and give your body what it’s asking for first thing in the morning. And to make the mornings less hectic, make 2 batches and freeze. Defrost the night before on a counter or pop in the microwave. If you are having a Starbucks muffin or a Tim Hortons donut for breakfast and thinking you are OK, let me tell…

Pumpkin Protein Oat Bars

These pumpkin protein bars are so scrumptious and guilt-free!!! You would never guess they are healthy, they just don’t taste that. So moist, rich and all things pumpkin. I haven’t used a drop of oil because I thought applesauce + pumpkin puree should do the trick, and I was right. They are also gluten free which apparently is a big thing right now. I’m not following a gluten free diet but I believe in moderation. Sometimes, I bake with whole wheat flour and sometimes with oats, almond meal…

Chocolate Chip Quinoa Granola Bars

I have love and hate relationship with granola bars. I love the convenience but hate how hard it is to make them healthy, and my kids like them at same time, right?! I also hate the cost of good granola bars. The only granola bars I buy are organic Taste of Nature. A box at Costco costs $18, ouch. I do not eat granola bars myself, very rarely, but for kids they are perfect. I’m more of a protein bar girl.
