No Bake Thumbprint Snack Cookies

These are great snack cookies because they contain only 1 tbsp of maple syrup per entire batch. Eating these No Bake Thumbprint Cookies would be equivalent to toasting an oat cake (if it existed), spreading with coconut oil and almond butter, and then sprinkling with raw shelled hemp seeds. Since learning that hemp hearts contain very few carbs compared to flax and chia, I have been liberally sprinkling them on my toasted brown rice cakes smothered with almond butter. So, that is where inspiration for cookies comes from.

Blueberry Oatmeal Crumble Bars

I have been waiting all winter long to make crumb bars, cobblers and crisps thinking fresh blueberries, strawberries and raspberries come spring time… Ironically, knowing what I know now, EWG in one report finding 38 various pesticides on strawberries and raspberries that DO NOT wash off with water, I ended up baking these blueberry oatmeal crumble bars with frozen blueberries LOL. Organic fresh berries in May in Vancouver are not that affordable, frozen – twice cheaper.

Lemon Blueberry Overnight Smoothie Jars

One day I got tired of Overnight Oats and Chia Pudding, and thought “What if I combine both and soak them in a flavoured smoothie?!”. I came from an evening walk and whipped these up in 5 minutes. Honestly, these breakfast jars were amazing! Even my kids ate them for a snack no problem and it is not easy to feed them chia pudding. Really depends on a flavour and consistency.

Carrot Oatmeal Muffins

I have been craving carrot oatmeal muffins for weeks. Since I always have bags and bags of organic carrots on hand, this recipe was a no special grocery store trip. These days I cook with organic ingredients I purchased at a reasonable price rather than a recipe idea out of the blue. Eating seasonal makes eating 90% organic possible. OK, these might not be the most appetizing muffins you have ever seen but they are delicious! Overnight Superfoods Oat Parfait

Banana Oat Bars

These banana oat bars is another favourite quick breakfast of mine. I have quite a collection by now, which you can check out under Breakfast category. These bars are also very similar to Banana Protein Oatmeal Cups but without protein powder. I love having oats for breakfast because they are not wheat (everything in moderation) and cook quickly.
