Flourless Pumpkin Muffins with Coconut

These vegan flourless pumpkin muffins are nothing less than a nutrition powerhouse and are only naturally sweetened (and I’m not talking about maple syrup). Skip the drive through or a bowl of sugary cereal, and give your body what it’s asking for first thing in the morning. And to make the mornings less hectic, make 2 batches and freeze. Defrost the night before on a counter or pop in the microwave. If you are having a Starbucks muffin or a Tim Hortons donut for breakfast and thinking you are OK, let me tell…

Pumpkin Protein Oat Bars

These pumpkin protein bars are so scrumptious and guilt-free!!! You would never guess they are healthy, they just don’t taste that. So moist, rich and all things pumpkin. I haven’t used a drop of oil because I thought applesauce + pumpkin puree should do the trick, and I was right. They are also gluten free which apparently is a big thing right now. I’m not following a gluten free diet but I believe in moderation. Sometimes, I bake with whole wheat flour and sometimes with oats, almond meal…

Chocolate Chip Quinoa Granola Bars

I have love and hate relationship with granola bars. I love the convenience but hate how hard it is to make them healthy, and my kids like them at same time, right?! I also hate the cost of good granola bars. The only granola bars I buy are organic Taste of Nature. A box at Costco costs $18, ouch. I do not eat granola bars myself, very rarely, but for kids they are perfect. I’m more of a protein bar girl.

Caffe Mocha Protein Overnight Oatmeal

5 minutes and you have a healthy breakfast on-the-go for the next 5 days. This overnight oatmeal is like eating dessert for breakfast – creamy, sweet and chocolate-y. And it has extra coffee that I’m sure any mama needs on a weekday morning. If you are not a fan of protein powder, I have included substitute options. I love using protein powder because it is usually naturally sweetened, so I can keep my food low in sugar. You can use stevia as well.

Quinoa Breakfast Bake

This quinoa breakfast bake has been waiting for me every morning during the past week. Delicious, nutritious and the best part is I didn’t have to cook it. Just place a slice on my plate, top with a dollop of non-fat Greek yogurt (highly recommended) and a few berries or bananas. I even didn’t warm it up because we decided to get rid of microwave for health reasons.

Chocolate Protein Oatmeal Muffins

Basically, breakfast for “lazy” healthy people who love chocolate and protein. I fit in. And I guarantee you will love these protein oatmeal muffins – simple ingredients, one bowl and can be enjoyed on the go. They are also: freezer friendly, double batch necessary, playground/hockey game snack, purse-able, high in protein, fiber and chocolate. Zucchini make the cups moist and bananas add natural sweetness. No added sugar here. My kids, who hate zucchini, went crazy for these and still haven’t realized it was there. In fact, that’s an awesomeness of…

Coconut Chia and Quinoa Granola

I have never been a fan of granola until I made this Coconut Chia and Quinoa Granola. All things roasted, toasted, sweet, crunchy and superfood that’s good for you. Oh-ehm-dzhee. I officially like granola now! My granola. Not the store bought one though. I don’t know, it just doesn’t taste fresh to me and is sooooo sweet, I can’t take it. Even the organic one. First of all, roasted quinoa is to die for. Just like that, roast from dry and uncooked. And I hope I don’t have…

Overnight Oats

These overnight oats and that chia pudding are perfect for lazy clean eating breakfast makers like me. I ran out of ideas and was getting tired of peanut butter on a sprouted toast breakfast. I just hate cooking breakfast, can’t stand it. I think because I’m still half asleep and have to make sure 2 kids leave the house wearing same shoes and more than a cheese string in a lunch bag. You know?! I’m sure you know. I told Alex I wish I had a mini…
