Cruciferous Peanut Butter Rice

On Saturday I missed farmers market because we went hiking on Mount Baker again. It was our dear Calgary friends’ last day in Vancouver so we wanted to make it memorable. Plus Alex just got back from Israel after one of the most stressful weeks of his life (see last post). He wanted a breath of fresh air and to resume normal life ASAP. These two reasons were worth missing piles of cabbage, cauliflower and potatoes. I decided to catch up shopping at my grocery store’s organic section on Sunday….

Peanut Butter Protein Pancakes

I managed to whip up these easy peanut butter protein pancakes last week before my little family’s world was turned upside down by Sunday. Today is my birthday. I turned 35. I am celebrating it with a heart half heavy and half full. Three days ago we received a phone call that my mother in law passed away suddenly and tragically at the young age of 67. My poor husband was on Vancouver-Tel Aviv flight 15 hours later. My heart is breaking for him and his sister but I…

Simple Peanut Sauce

Not only is this peanut sauce simple, it is also clean which is hard to come by at the store. Do they even sell peanut sauces? It reminded me a Japanese restaurant’s salad dressing but different because I didn’t grate ginger etc. This simple peanut sauce is made exclusively with pantry and fridge ingredients. I can’t remember for sure but I think I had similar sauce at a steak restaurant many-many years ago when we used to live in Calgary (thank God “used to”, no offence, great people but…

PB Banana Coconut Flour Bread

I made banana coconut flour bread without any added sugar, not even maple syrup or honey. Sounds just like the coconut oil fudge from the other day, right?! I do not like to post similar recipes in a row but I had 8 bananas laying in a cupboard waiting to ripen, so they were all ready at once. I have to hide them from my monkeys. Meet 9 lbs of coconut flour from my pantry. A few years ago I was on a gluten free kick for a bit…

Clean Eating Snickers Oat Bars

Snickers, Mars, Bounty, Kit Kat and Twix chocolate bars have a special place in my heart. When I was 10, my mom went to England to study for a month. I stayed with grandma in Ukraine and needless to say was crossing out days on a calendar. When mom came back, she brought me a pair of my 1st high heel girl’s shoes (black, lacquer; I wished my feet stopped growing) and a bunch of chocolate bars. Among them was Snickers. It was my first time trying a chocolate bar…

Healthy No Bake Peanut Butter Bars

OMG these healthy no bake peanut butter bars! 6 squares you see was everything we had left in 2 days. That is all I got to photograph. They were so good, we ate them all, even my 4 year old gobbled them up and 8 year old was away camping. That means 3 of us ate a lot of peanut butter oat bars.:) All they contain is almonds, oatmeal, peanut butter, coconut flakes and a bit of maple syrup. You can add maple syrup and chocolate chips as…

Flourless Peanut Butter Chocolate Chip Blondies

I met Karina last year on Instagram. Right away I admired her strength as a stage 4 blood cancer survivor as a young mother of 3, a story she later on shares in her book. What amazed me next was her glorious food! So, I got her over here to share a recipe because you have to discover Cafe Delites. Many Karina’s recipes fit or can be adjusted to fit Clean Eating lifestyle. On Thursday I baked these Peanut Butter Chocolate Chip Blondies and had 4 right away, I couldn’t stop!…

No Bake Protein Cookies

These no bake protein cookies are a real deal! Sweetened with only 4 dates per the whole batch, they curb the sweet tooth craving without ruining your waistline. My cravings are the worst at night, after dinner or in the afternoon. I’m sure you can relate.:) I first made these no bake protein cookies into protein balls. Then a thought of holding an actual cookie that is chewy, crunchy and chocolatey wouldn’t leave me. So, I turned my balls (sounds weird, I know) into cookies and they were to…

Peanut Butter Swirl Black Bean Brownies

Brownies…I remember first time trying a brownie on an airplane, on my way to Mexico last year. My immediate thought was “I could eat this every day!”. Believe it or not, that airplane brownie was pretty darn good, probably because being full of cr@p. And yes, I have never had a brownie in 13 years of living in Canada. True fact. I love dark chocolate and I love peanut butter. Who doesn’t?! A few months ago I developed a Black Bean Brownie Recipe, which is a big…
