Cauliflower Shepherd’s Pie

Cauliflower Shepherd’s Pie is essentially a dog pile (a new word I learnt during Kyle’s last hockey game) of veggies. And just to forewarn you – I’m not a potato hater but rather lover (see my last weekend eats). How can I be Ukrainian and hate potatoes when we ate them every day?! Potatoes are not bad for you. Veggie Mac and Cheese Muffins Recipe

Things are slowly settling back to normal after summer. Besides my mom coming for a long visit and me and Alex going for a dream team vacation of the decade, we are back to a routine. I did share on Tuesday oh how much I have missed school. I love summer but I equally love the first few months of fall when it is still warm enough, kids are busy and I have time for myself. Vegan Coleslaw Macaroni Salad

I am not sure where I am heading with no dairy in my diet but for now I have to stick to vegan salad dressings. Rice with Peas & Pine Nuts Recipe

You know how plain rice can get boring, right?! This recipe is a quick alternative to add a variety to your rice side dishes menu. Especially on weeknights, when you are mostly short on time. Just good old brown rice with frozen peas and toasted pine nuts. No turning on the oven, sautéing garlic/onions or defrosting the peas. Just toasting the pine nuts, but that part is easy. I promise! This rice dish is also vegan, vegetarian and gluten free.
