Healthy Pasta Salad with Feta, Tomatoes and Pecans

I’m slowly getting back to my normal routine here. December was mind blowing with all the Christmas craziness, hockey, Kyle’s almost pneumonia cold and skiing. Having a child born on January 1st extends celebrations well into January making 1.5 months a complete blur of who me and Alex are (more me). I still have a 6 year old’s birthday party to survive and after that when I close my eyes, I will be seeing never ending waves which are getting more and more real. For now, I’m keeping my eyes open…

Healthy Rum Balls

Until today, if you asked my boys what are their most vivid Christmas memories besides a psychic Santa at the mall (thanks to a bluetooth ear piece) and going on a West Coast Express Santa train downtown to drink free hot chocolate and juice at daddy’s work, they would have said “Mom listening to Frank Sinatra non-stop”. And they would have also added immediately “She listens to him all year round!!!”. Every July Adam asks me “Mommy, why are you listening to Christmas music in summer?”. Well, what can I…

Clean Green Bean Casserole Two Ways

Clean Green Bean Casserole #1 I will be very honest with you about the green bean casserole – I don’t love it. More than that I am not a huge fan of many fall vegetables and dishes. I’m just not and neither are my kids. I will cook and eat them but I much prefer fresh and juicy produce centered recipes. However, as kids are growing I want them to grow up with traditions. I want them to feel Canadian and included. Yes, I want that! I’m all…

Spinach Mushroom Salad

A spinach mushroom salad that happened by a total accident. This is yet the tastiest spinach salad I have ever tried! I know there are so many spinach salad recipes and every year summer comes and goes, and I do not have a staple recipe I rely on. Just the way it was and no other explanation. Until I took my 5 year old grocery shopping with me last week. He wasn’t excited but I handed him a basket on wheels and said “Load it up”. Most kids love doing…

Kale Blueberry Salad

Uber delicious kale blueberry salad with curly or baby kale (best types of kale for this salad IMHO), soft goat cheese, local fresh blueberries and easy homemade candied pecans. All of this goodness “swimming” in healthy poppy seed dressing I posted yesterday. If you are looking for more hearty salads with quinoa and/or kale, check out this chicken quinoa kale salad with grilled peach and avocado, and blueberry quinoa salad.

No Bake Pumpkin Pie

This healthy no bake pumpkin pie…Where shall we start?! Is unbelievable! Plus it’s vegan and gluten free. After my healthy peanut butter pie was such a hit with everyone, I wanted to create something new. Pumpkin is perfect for frozen pies – it adds volume and pumpkin taste (obviously) along with many health benefits. This pumpkin pie turned out so creamy, my 8 year old believed me it was made with pumpkin ice cream! He didn’t appreciate the crust much (pecans are not a kids’ thing I guess) but gobbled the filling….

Pumpkin Crumb Protein Muffins Recipe

Moist, tender and full of pumpkin flavour muffins with the most delicious crumb topping – bits of pecans (or walnuts) caramelized in maple syrup with hints of salt and cinnamon. And they are good for you filled with protein, healthy fats and sweetened with dates. Perfect for snack, breakfast and school lunches. My kids devoured these pumpkin protein muffins in minutes and they are picky with muffins. You wouldn’t find these muffins chalky if you use good quality plant-based protein powder. My top picks are VEGA and Orgain. I stand…

Blueberry Quinoa Salad

Did I tell you, guys, I stopped eating any bread products? Even Ezekiel ones?! Just occasionally I would eat half a toast with peanut butter. It happened unintentionally. By eating more whole foods like grains, seeds, vegetables and fruits, I had no room left for bread. And yes, I did see a change in my body definition. This blueberry quinoa salad is one of my new whole food meals, perfect for hot summer days. This is all you might need for lunch or dinner, well maybe kale blueberry…

Baby Greens Salad with Pecans, Pomegranate and Goat Cheese

Mixed baby greens salad with fresh pomegranate arils, roasted pecans, soft goat cheese and zesty green onion. Drizzled with delicious homemade mango dressing. This healthy salad is so colourful, I wanted to call it a Christmas Salad. And I obviously forgot to add green onions. I made this salad past weekend for an Italian dinner at our friend’s house. It was a hit even among the kids who loved the fruity & sweet mango dressing and my kids love pomegranate. This baby greens salad is great for get…

Fall Quinoa Salad

Yesterday I went to my local farmers market and got lots of apples. Today was cooking and photo day for my new eBook – 30 Clean Dinners that comes out on January 5, 2014. Obviously, it was a daycare day for Adam. Amongst total kitchen chaos and my 2 month old broken dishwasher (again), I thought of my neighbours, and all of us of course. Our American friends celebrate Thanksgiving next week and I thought this fall quinoa salad with apples, cranberries, pecans & maple basil dressing would be perfect…
