Healthy Pumpkin Brownies

I am such an idiot. The other day while whisking these healthy pumpkin brownies I kept thinking how much I am obsessed with dark chocolate. And how much I love to photograph dark chocolate. So, I took like 50 shots of falling batter, pouring batter and cute little chocolate chips. Just to delete them all the next day. Yeaaaaaaaaaaaah… I also lost a bottle of avocado oil somewhere between Costco and home. Who loses food while driving?! Me! We might find it 6 months later in a trunk somewhere…

Flourless Pumpkin Pancakes

Once a week I like to serve breakfast for dinner just to give myself a break. Or even on a lazy Sunday night like with these flourless pumpkin pancakes which I whipped up after a crisp evening Fall walk. I felt energized and fresh (I tried hard not to inhale laundry VOCs). After a Thanksgiving feast we had past weekend (so technically my Sunday night was Monday) I felt like a fit recipe without sugar and flour. I like to make 3 kinds of recipes: healthified classics, my own…

Pumpkin Blondies

Melt in your mouth pumpkin blondies on the menu this week! Fudgy, moist, rich and made without flour or eggs. I’m NOT joining a tribe of cooking weirdness, I promise, but I love to mix things up in my diet to keep it more balanced. Yes, you guessed it right – blondies with chickpeas. Aha. I promise there is 3 out of 150% chickpea taste in them. Test on the pickiest husband/boyfriend, if you have one. Mine will eat anything, even recipe tests I don’t like, Alex loves…

Healthy Easy Pumpkin Soup

Eating easy pumpkin soup (so darn easy so I get you now!) and celebrating all things Halloween is still new to me. I see how my kids’ eyes light up and I wish I could relate. Growing up in Ukraine, we celebrated Fall by juicing apples, canning apple juice and mushroom picking in a nearby forest. Fall also meant it was time to start eating jams canned during summer months as there was no fresh produce available till next summer. We really survived on canning everything, with salt…

Flourless Pumpkin Muffins with Coconut

These vegan flourless pumpkin muffins are nothing less than a nutrition powerhouse and are only naturally sweetened (and I’m not talking about maple syrup). Skip the drive through or a bowl of sugary cereal, and give your body what it’s asking for first thing in the morning. And to make the mornings less hectic, make 2 batches and freeze. Defrost the night before on a counter or pop in the microwave. If you are having a Starbucks muffin or a Tim Hortons donut for breakfast and thinking you are OK, let me tell…

Pumpkin Pie Chia Pudding

Chia pudding never gets old. Snack or a breakfast, it’s nutritious, easy and affordable. I don’t make enough of chia pudding with no good answer for that. I think I go through stages of having it all week and then feeling like I need a break. This pumpkin pie chia pudding is made only with 5 ingredients you more likely already have on hand. I also took into consideration many readers’ request for Vanilla and Chocolate Chia Puddings to be thicker. You will also find if using heaping tablespoons of chia seeds,…

Parmesan Pumpkin and Spinach Quinoa Recipe

30 minute, from start to finish, healthy meatless dinner idea. Light and fluffy quinoa in a sweet Parmesan pumpkin sauce with fresh baby spinach. Even my 8 year old was licking the spoon and he is not a pumpkin and quinoa fan. Cheese always does the trick though. And Parmesan is one of my favourites because you need just a little to go a long way. This pumpkin quinoa was so easy and delicious! I’m on a major pumpkin kick this year because I love how it adds volume to desserts…

Whole Wheat Pumpkin Cream Cheese Muffins

Soft and moist little breads made 100% whole wheat, sweetened only with dates (except maple syrup in topping and filling – that’s an FYI for my PD commenters), filled with scrumptious organic cream cheese and topped with out of this world cinnamon pepita crumb topping. And of course, pumpkin in every bite with a bit of cream cheese. These whole wheat pumpkin muffins have a spot on amount of pumpkin, pumpkin pie spice and cream cheese. Delicious!

Healthy No Bake Pumpkin Pie

This healthy no bake pumpkin pie…Where shall we start?! Is unbelievable! Plus it’s vegan and gluten free. After my No Bake Peanut Butter Pie was such a hit with everyone, I wanted to create something new. Pumpkin is perfect for frozen pies – it adds volume and pumpkin taste (obviously) along with many health benefits. This pumpkin pie turned out so creamy, my 8 year old believed me it was made with pumpkin ice cream! He didn’t appreciate the crust much (pecans are not a kids’ thing I guess) but gobbled the…
