Easy Miso Soup with Meatballs

I’m not the one to make sushi at home. I’m quite creative and frugal when it comes to food, but sushi – we go out for, especially in Vancouver, the best American made sushi I ever had are here. Miso soup, I want to talk to you about making an easy miso soup with meatballs. It is so damn ridiculously simple recipe and has about 10 shades of flavour. And to make it clear – we are talking about the miso soup without dashi or fish sauce, and…

Red Lentil Vegetable Soup with Two Spices

It was raining all week. Which I didn’t mind because I could finally bake and cook. On Wednesday I made a huge pot of this red lentil vegetable soup that lasted 2 days. Many of you might not know but I grew up with a single mom who had/has insomnia and anxiety issues. So, most days she was and still is not feeling well enough to do any normal daily activities that so many of us take for granted. On many of those days I heard her say “Let’s…

Protein Apple Cinnamon Smoothie

This apple cinnamon smoothie is sponsored by Vega® and Silk® in an effort to help you Build a Better Smoothie. My apple tree is full of apples. Sour apples. Most of them have worms. But all organic. Periodically I go out, harvest a few and sort. Usually I make and freeze applesauce with wormed apples, which I use in baking recipes throughout the year. So far this year I have made one batch and still have a large stash from previous season. I should do a research on how to grow…

Turkey Quinoa Meatballs with Sweet Onion

We just returned from Whistler on Sunday. And straight to hockey try outs so my head is spinning again. The trip was good but I took 0 pictures. Maybe 2 with my phone. Btw, you can see our last year’s trip which was exactly the same this year. We did a lot of pool time, hiking on the most gorgeous mountains and even water rafting. It was all great but I was exhausted. I think I am ready for school. I am tired from kids. And at this…

Juicy Spinach Chicken Quinoa Casserole

I am not sure word “juicy” is the most appropriate for a casserole but “moist” sounds even worse. So, I am going with “juicy” to let you know that this chicken quinoa casserole is not dry which is often the case with quinoa bake recipes. I didn’t think word “creamy” was appropriate either because I barely used any dairy. And still this healthy casserole is so moist from zucchini, full of basil flavour and is protein and veggie packed. It all started with a whole chicken… A few…

Quinoa Bread Recipe

+20 C outside and my slightly enlarged mid section after hibernation made me stop eating bread. I came to terms that low rise Lululemon pants are going on Ebay. Thankfully, it took them only about 10 years to start making high waist leggings. Hello?! Like what sane girl doesn’t want all her “junk in the trunk”?! Well, maybe except Tone It Up girls and 15 year olds. I do hope no suicides were committed among “normal” female population although I have seen a few broken hearts on Instagram. The girls look…

Garlic Butter Shrimp, Quinoa and Asparagus

I made this shrimp quinoa with asparagus and garlic butter last Thursday before Easter and it was a big hit even among the kids. Who doesn’t like garlic butter or shrimp?! This recipe is large so if serving 2 people cut in half because I wouldn’t freeze the leftovers. However, for 4 of us it was so nice to have lunch leftovers on a day off. The stir fry also can be refrigerated for up to 3 – 5 days (lunches for work!). Easter really marked the beginning…

Butternut Squash Quinoa Salad

I keep working on my relationship with butternut squash => honey garlic butternut squash. I made a rule to buy it every few weeks and just “go for it” in the kitchen. Today in a form of butternut squash quinoa salad with dried fruits, smoked paprika and buttery warm dressing. Where paprika is not just paprika and “butter” is not really a butter.

Chocolate Quinoa Muffins

I would go for one of these chocolate quinoa muffins in a heartbeat right now but they are all gone. We ate some, kids-neighbours ate some and friends-neighbours ate some. Honestly, I do not run with a tray of freshly baked goodies in my hands, towel on a shoulder and tripping on Lego offering muffins to whoever comes in the door.

Quinoa Stuffed Eggplant Tex Mex Style

When I was a kid, August always meant an abundance of eggplant dishes at dinner table. That is when eggplant is in season in Ukraine and we better “stock up” our bodies with potassium because you won’t get it for another 11 months. There was no bananas which explains why 16 years later after immigration and I still can’t stop eating them. My favourite fruit ever! Anyways, traditional Ukrainian eggplant dishes consisted of panfried eggplant rounds dipped in flour, garlic, salt and pepper. Or the same rounds without flour but layered…
