Citrus Quinoa Salad

So, this citrus quinoa salad…I love Fridays! My favourite day of the week when a whole weekend of craziness is ahead and a glass (or two) of wine I can officially talk about. And equally I hate Sundays because I just feel drained by then. Mixed feelings – I do find weekends fun but way more exhausting than weekdays. I don’t work on Friday and have my little boy at home to spend time together, whether playing Go Fish, painting doors or shopping at Costco. Vibrant days of living a dream….

Eggs and Bacon Breakfast Quinoa Bake

Healthy Christmas breakfast with eggs and bacon prepared the night before. All you have to do is place this breakfast quinoa bake in the oven on a Christmas morning, go open presents and come back to top it with fresh diced fruit because avocado and tomatoes are not vegetables. Adults can add a healthy dose of a clean hot sauce – this one is our favourite right now! And green onions too. You could add a sprinkle of cheese however for me, personally, bacon aroma was enough of flavour and…

Slow Cooker Butternut Squash Soup with Chicken and Quinoa

It is cold and crisp in PNW. -4 C in the morning is borderline state of emergency on the West Coast. I have a good laugh watching neighbours covering their cars with blankets after living in Alberta for 8 years. There, you turn heater on in the morning and AC in the afternoon in summer. Only in Alberta. In winter, plug your car below -25 C and other times just make sure to always have that scraper thing.

Cheeseburger Quinoa Casserole

While the name suggests a completely unhealthy meal, this cheeseburger quinoa casserole is quite the opposite. Have you seen that WHO confirmed processed and red meat cause cancer?! That is not news to me but quite reassuring and a good reminder. Now to make it clear moderation and occasional consumption are OK but on a regular basis – that is where it gets risky. Overall, overconsumption of any animal products is not healthy – The China Study is an easy read about connection between meat and cancer.

One Pot Quinoa, Chicken and Broccoli

In Ukraine we have this dish, “plov”, made with chicken or lamb, rice and lots of spices. Basically a loaded pilaf. My dad made a wicked one with probably 1/2 cup of good quality olive oil and various parts of chicken. My sister in law makes a legendary one with lamb because her husband is from southwestern part of former USSR that is close to Iran and Pakistan where people love their spices. So, I made a similar one pot quinoa chicken with broccoli that is ready in…

Breakfast Quinoa in a Slow Cooker

I just returned from Los Angeles and truly wished this Breakfast Quinoa was waiting for me on a counter this morning. I made this recipe and took pictures last week and am making again tonight. I had to send kids to school/daycare with emergency Costco’s cheese pizza and at least all organic packaged snacks and baby food pouches I brought from attending the ShiftCon. I’m staring at these photos and they are very refreshing compared to the collagen diluted in water and protein shakes I have consumed today….

Sausage Quinoa with Poblanos

Nutrition Info is back at the bottom of recipes…I mean, I will do my best whenever I can.:) Boy, this sausage quinoa recipe has a kick. I originally wanted to make it with rice but because I also made rice pudding the same day (coming next), I chose quinoa. It was quite spicy, however if you are one of those who commented “I doubled the spices” on my Crock Pot Butter Chicken, you should be fine and might have to just half double poblanos here. I’m more of a mild girl and…

Broccoli Quinoa Salad

Broccoli quinoa salad and…school is out and hockey season is over! On Wednesday I slept in until 8:45 am which I haven’t done in years. Plus my oldest one went camping with a friend for 3 days and let me tell you having 1 child is a joke! OMG, it is so quiet and peaceful. I leisurely stroll around the house with a cup of coffee. I don’t have to drive anywhere and there is no pressure of a schedule. Plus I had great one on one time…

88 Superfood Salad Recipes for Spring

I LOVE salads! Everyone who knows me in person knows that. I always get asked to bring salads to any gathering. You should love salads too – often cheap, fridge cleaning and waist friendly (if you don’t add a cup of mayo or ranch dressing). This post was so much fun as I don’t remember last time I got to sit on a couch, browse recipes, look at pretty food and just copy paste titles and links all day long. I have included only Clean Eating approved superfood salad…
