I made this shrimp quinoa with asparagus and garlic butter last Thursday before Easter and it was a big hit even among the kids. Who doesn’t like garlic butter or shrimp?! Butternut Squash Quinoa Salad

I keep working on my relationship with butternut squash => honey garlic butternut squash. I made a rule to buy it every few weeks and just “go for it” in the kitchen. Today in a form of butternut squash quinoa salad with dried fruits, smoked paprika and buttery warm dressing. Where paprika is not just paprika and “butter” is not really a butter.

Chocolate Quinoa Muffins

I would go for one of these chocolate quinoa muffins in a heartbeat right now but they are all gone. We ate some, kids-neighbours ate some and friends-neighbours ate some. Citrus Quinoa Salad

So, this citrus quinoa salad…I love Fridays! My favourite day of the week when a whole weekend of craziness is ahead and a glass (or two) of wine I can officially talk about. And equally I hate Sundays because I just feel drained by then. Quinoa Egg Breakfast Bake

Healthy Christmas breakfast with eggs and bacon prepared the night before. All you have to do is place this quinoa egg breakfast bake in the oven on a Christmas morning, go open presents and come back to top it with fresh diced fruit because avocado and tomatoes are not vegetables. Cheeseburger Quinoa Casserole

While the name suggests a completely unhealthy meal, this cheeseburger quinoa casserole is quite the opposite. Have you seen that WHO confirmed processed and red meat cause cancer?! That is not news to me but quite reassuring and a good reminder. Now to make it clear moderation and occasional consumption are OK but on a regular basis – that is where it gets risky. Overall, overconsumption of any animal products is not healthy – The China Study is an easy read about connection between meat and cancer.

One Pot Quinoa, Chicken and Broccoli

In Ukraine we have this dish, “plov”, made with chicken or lamb, rice and lots of spices. Basically a loaded pilaf. Breakfast Quinoa in a Slow Cooker

I just returned from Los Angeles and truly wished this Breakfast Quinoa was waiting for me on a counter this morning. I made this recipe and took pictures last week and am making again tonight. I had to send kids to school/daycare with emergency Costco’s cheese pizza and at least all organic packaged snacks and baby food pouches I brought from attending the ShiftCon. Sausage Quinoa with Poblanos
