This is such a mouth, throat (literally, you just wait until it goes down) and heart warming kale and quinoa salad with sweet and zesty cinnamon dressing. I’m not vegan and am very picky with vegetarian meals, and I loved this vegetarian quinoa chili with a slow cooker option. Particularly using quinoa instead of ground meat was awesome! When a cashier was nice enough to point out $5 price for a head of cauliflower, I was frankly surprised September is not a cauliflower season. Oh well, I went ahead and bought 2 heads anyways and made this delicious quinoa gratin. If you ever want to eat something without stressing about the calories, know it’s vegetables. You will get full before you overeat them.

Chocolate Chip Quinoa Granola Bars

I have love and hate relationship with granola bars. I love the convenience but hate how hard it is to make them healthy, and my kids like them at same time, right?! I also hate the cost of good granola bars. The only granola bars I buy are organic Taste of Nature. A box at Costco costs $18, ouch. I do not eat granola bars myself, very rarely, but for kids they are perfect. I’m more of a protein bar girl.
