My right thumb’s knuckle can’t heal properly because I keep grating carrots day after day, baking oatmeal breakfast bars and scooping carrot cake truffles. Butternut Squash Quinoa Salad

I keep working on my relationship with butternut squash => honey garlic butternut squash. I made a rule to buy it every few weeks and just “go for it” in the kitchen. Today in a form of butternut squash quinoa salad with dried fruits, smoked paprika and buttery warm dressing. Where paprika is not just paprika and “butter” is not really a butter.

Healthy Oat Bran Muffins

Last week a reader asked me if I have a healthy oat bran muffins recipe. Her grandma used to make one with chopped dates. After a few tries I came up with my preferred version: whole wheat flour, organic high fibre oat bran, a touch of unsulphured molasses, mainly moistened with applesauce from my garden and bursting with raisins and walnut pieces. You can also use wheat bran or chopped dates.
