Spaghetti Squash Chow Mein

I baked 8 lbs of spaghetti squash, used some for making extremely (!!!) delicious chow mein, and the rest is tucked in the fridge for a week. Well, the rest is only 2 lbs, which makes this spaghetti squash chow mein loaded with 6 lbs of squash, in addition to cabbage and carrots. I whisked my own imitation of healthy homemade oyster sauce, and kids were squeaking like a bunch of piglets with excitement, that’s while chomping on lbs and lbs of spaghetti squash. If you are brave…

40 Healthy Spaghetti Squash Recipes

40 healthy spaghetti squash recipes including casseroles, boats, bowls and pasta, for real life without crazy amount of cheese and weird ingredients. I personally went through each recipe from other talented healthy cooks to make sure recipe is relatively easy, doesn’t contain a lot of ingredients, ingredients are simple, and spaghetti squash recipes are healthy because what is the point of eating spaghetti squash casserole if it’s loaded with 3 cups of cheese, right?! And although I haven’t tested every single recipe, I found at least one comment…

Spaghetti Squash Casserole

Spaghetti squash mixed with organic cream of mushroom soup, tomato sauce, cheese and tender turkey pieces, then topped with crunchy Panko breadcrumb topping and baked until bubbly and golden. This spaghetti squash casserole was SO delicious, comforting and at same time guilt free. After trying spaghetti squash quiche with kale and mushrooms, I have experimented with  a few casseroles using spaghetti squash instead of traditional pasta (see vegetarian baked spaghetti squash casserole).

Spaghetti Squash Boats Tex Mex

These spaghetti squash boats is one of the best dinners I made. The texture, the flavour, the smell and the calories…all to die for! What a great light dinner, and it wasn’t hard. I don’t do hard, I’m “lazy”. I had these 2 spaghetti squash laying in my fridge and no plan. I have made spaghetti squash casserole before and wanted to try the boats. Since this recipe came out, I created a few more spaghetti squash boats recipes: butter chicken spaghetti squash boats with coconut milk based traditional Indian sauce, chicken alfredo spaghetti…

Butter Chicken Spaghetti Squash Boats

Who am I to talk about traditional Indian dishes but oh, I will go there as I did before with slow cooker chicken tikka masala and crock pot butter chicken. Prepare to be amazed. If my Ukrainian grandma could make a chicken curry with sour cream, onions and curry powder back in the 90s, why can’t I make some butter chicken and spaghetti squash pretending squash is pasta?! Haha, let’s be clear spaghetti squash doesn’t replace spaghetti but tastes very good. By the way, grandma’s curry was DELISH!…

Spaghetti Squash Quiche with Vegetables

There is everything delicious about the balsamic veggies filling and nothing traditional about the crust of this spaghetti squash quiche. But I realize my entire life is far from “traditions” of the locals. Let me tell you how I see today’s North American everyday life through my Eastern European eyes. Briefly. Countertops are washed with Lysol and windows with Windex. Clothes is washed in Tide, with Downy and then dried with Bounce. Becel is butter. Scents are plugged in houses and cars. Bathrooms contain air freshener. Toilet paper is of…

Baked Spaghetti Squash Casserole

You are either thinking how tired you are of spaghetti squash or very happy to see this new recipe for a squash sitting in your fridge right now. Personally, between spaghetti squash mac and cheese, tex mex leftover turkey spaghetti squash skillet and this baked spaghetti squash casserole I made at least twice each in the past month, I think I’m “squashed out” until after Christmas. But this baked spaghetti squash casserole was GOOD! In case you are still planning a Thanksgiving menu, this healthy and clean bake should go…

Spaghetti Squash Mac and Cheese

This Fall I have 2 addictions: spaghetti squash and my blue dutch oven. I keep buying spaghetti squash every week, roasting it in the oven and then throwing into this pot waiting for magic to happen…or not. Feeling like a mad scientist is the most satisfactory part of cooking for me. I honestly can’t wrap my head around the fact some people do not like to cook. But I get it – that is like I can’t stand anything to do with horses. So, fair enough. So far,…

Tex Mex Leftover Turkey Spaghetti Squash

Do you know that Thanksgiving in Canada happens mid-October?! I always wonder, if you are American how it feels to eat turkey end of November and then a month later?! Does it still feel exciting?! We always can’t wait for a Thanksgiving turkey and then Christmas come…we are still pumped to spend $80 on turkey. Yes! That is how much I paid for my special, local and free range bird this year. My hand was shaking as I was passing my debit card to a cashier and I…

Chicken Alfredo Spaghetti Squash Boats

Spaghetti squash boats with chicken in creamy Alfredo sauce is comfort food made lighter by replacing traditional pasta with tender spaghetti squash and heavy cream with not less creamy but so much healthier Greek yogurt. Without sacrificing the flavour of course – garlic and freshly grated Parmesan cheese add so much flavour to the sauce. I haven’t had Alfredo sauce for years. My blogger friend Alex from Canuck Cuisine once mentioned to add cornstarch to Greek yogurt to prevent it from curdling. We were talking about my Crock…
