Spinach Artichoke Quinoa Casserole

I love quinoa casserole because it is quick. If you are trying to eat less meat, this recipe along with black bean quinoa casserole is for you. This spinach artichoke casserole is hearty, filling and full of flavours. I used an entire box of pre-washed baby spinach – my favourite, I truly love the convenience of washed organic greens. Spinach shrinks a lot, so don’t be scared by the amount this recipe calls for. I have a hard time finding frozen or marinated in water artichoke hearts. They are always packed in oil…

Delicious Green Smoothie Recipe

Or how to make delicious green smoothie recipe that kids will actually drink. I’m not saying my kids prefer this green smoothie to candy but rather like it and do not object it every other day. And that’s good enough for me. Typical North American diet is full of meat and dairy products which increases acidity of your blood. In turn, it can lead to liver and kidney disease and unfortunately cancer. Dark leafy greens and other green vegetables help to reduce that acidity and guard from many other diseases,…

Baked Spinach Feta Dip

With all Holidays, sports events and many indoors gatherings during long winter months I thought I would share a baked spinach feta dip that you can feel good about sharing with your friends. You might also like healthy spinach dip, spinach and feta dip with shrimp, or eggplant feta dip recipes. Sweet Potato Egg Bake with Taco Seasoning

Breakfasts on-the-go are becoming a staple in my home. Me and Alex just love breakfast waiting for us in the fridge. I am also trying to make these breakfasts kid friendly because I wouldn’t let my kids have cereal every morning, even if it’s organic. Since breakfast has to include complex carbs my choice always turns to whole foods like oats, quinoa and sweet potatoes. I do not eat bread much, so quick toast isn’t an option. I have never incorporated sweet potato in a breakfast dish before and was absolutely…

I’m not a complicated breakfast person and if neither are you, then you will love this healthy and easy Spinach Bird’s Nest Eggs breakfast recipe! Organic egg and extra egg whites panfried with spinach, onion and bell pepper in a tomato paste sauce. Previously, I was scared of the eggs because of the fat and cholesterol content. Last week I was reading a Clean Eating magazine issue and came across famous Tosca Reno bragging how she eats eggs every day?!

MIL/sausage lover/junk food enthusiast’s verdict was “Mmmmmmm…mmmmmmm…mmmm”. Yes, I’m a good DIL. I feed…

Spinach and Feta Dip with Shrimp

Follow my blog with Bloglovin It’s time to dilute the flooding of no bake chocolate fudge, protein chia macaroons and double chocolate protein cookies with something savoury. Do you have friends? I do. Not many but we do. Do you have those friends who think everything tastes better with butter and cream? I do. Love them! Great people! So a couple of weeks ago me and Alex invited the butter-cream friends over for dinner. Besides making coconut cilantro chicken, rosemary roasted potatoes and a crisp watermelon & feta…

Healthy Spinach Dip

I have been craving some cheesy and hot healthy spinach dip for a while now…Over 5 years I would say. Generally, any spinach dip recipe calls for a lot of mayo and/or cream cheese. So I have been avoiding it and honestly was super scared to make it. See, I’m not an appetizer girl because growing up we never served them, however nowadays I appreciate a healthy serving of baked spinach feta dip, eggplant feta dip or spinach and feta dip with shrimp accompanied by a glass of wine.
