Slow Cooker Butternut Squash Soup

Originally published in 2015. It is cold and crisp in PNW. -4 C in the morning is borderline state of emergency on the West Coast. I have a good laugh watching neighbours covering their cars with blankets after living in Alberta for 8 years. There, you turn heater on in the morning and AC in the afternoon in summer. Only in Alberta. In winter, plug your car below -25 C and other times just make sure to always have that scraper thing.

Acorn Squash Casserole with Mushrooms

This acorn squash casserole was mind blowing – simple, healthy and delicious! Sweet squash, meaty baby portobello mushrooms (just brown mushrooms!), crispy broccoli (my kids call them “trees”) baked in tomato sauce with organic sharp white cheddar cheese. Stovetop Squash Mac and Cheese

I have never been a squash fan. Squash. Whaaaaat?! I just, honestly, didn’t know what to do with it and let’s be honest – do your kids like squash? I don’t cook separate meals, so I try to split the suffering between us and the kids 50/50. Yesterday, it was Adam’s turn to whine and nobody else’s.
