Strawberry Rhubarb Ice Cream

On Monday we celebrated Victoria Day in Canada. On Thursday before I made this strawberry rhubarb coconut ice cream which we have been enjoying over the extra long weekend burning off calories in-between scoops. Then it was all gone because it was so-so good and healthy compared to any store-bought ice cream. Dairy free, vegan, gluten free and refined sugars free. Clean eating heaven! It would be perfect for Memorial Day weekend! It is May which means rhubarb and strawberry season. I, as the most loyal seasonal produce shopper, bought three…

Healthy Almond Cake

Honestly, there is a reason I don’t bake. If I start experimenting with baking I just know that I will be eating non-stop. Eating is a part of my job. Like with this flourless almond cake recipe – I swear me and Alex ate most of it when I first made it for Easter. Yes, it is a healthy almond cake but it is still sugar and a cake. I ain’t gonna fool myself. I can’t stop with desserts so I trained myself better not to start at all. Plus…

Berry Salad Dressing

Today is Good Friday but the truth is I am writing this berry salad dressing post on Wednesday afternoon. Behind the scenes of a food blogger’s life also include completely unbalanced nutrition days: healthy homemade cereal for lunch. I am sitting on a couch and still feeling the high from a morning 30 minute workout with Chalene. I don’t know, she is my favourite! She does it for me. Honestly, I do not love indoor exercises and would much rather do fun outdoor activities. But when indoors I can…

O Organics Back to School Recipes

I’ve got some crazy awesome and simple ideas for you (and me) for back-to-school season. Can I say one more time how excited I’m not to hear “I’m bored!” and “What can I do?” anymore until about Christmas time?! Or write this post with 3 boys pillow fighting upstairs?! So, these back-to-school recipes are created not by me but rather by Safeway’s O Organics line of more than 400 products. All USDA certified organic and affordable (you can see photos of their produce sections I shared before here). I…

Almond Muffins with Berries

These almond muffins are not your traditional whole wheat muffins like whole wheat apple muffins or whole wheat pumpkin muffins! Made with almond flour (just ground up almonds and no worries I won’t be switching to arrowroot powder or tapioca starch any time soon), organic almond extract and coconut flakes, these blueberry and cherry almond muffins turned out exceptionally fluffy and OMG delicious!!! The edges reminded me of a cake my mom used to make with very well whipped eggs, butter and flour; similar to my healthy almond cake. In…

Healthy Homemade Popsicles

A few weekends ago, I took my kids for a walk and we were passing by neighbour’s house where kids were happily sucking onto bright green and red popsicles. The day was hot and popsicles definitely were hitting a spot. Immediately my mind started racing and it hit me – why don’t I make the same bright and sweet ice pops with fruit?! I don’t know why but I never thought of that, no idea why?! Why oh why LOL. After we got home, I quickly went through my fruit…

Healthy Cobbler

This wholesome healthy cobbler recipe will become a staple on your menu this summer, especially when you have more fruit and berries than you know what to do with. I’m thinking Pacific Northwest blueberries, Okanagan peaches, neighbour’s plums, hundreds of figs and apples from my garden, wild blackberries and over ripen bananas. Apricots, pears, rhubarb, cherries – you name it! Here in Vancouver, BC our summer produce choice is insanely amazing. You could also use frozen fruit, go ahead! Mango – mmm-mmm-mmm.

Chia Jam Recipe

Am I the only one making jam in winter?! I tried making chia seed jam first time ever last December when I couldn’t pass by $2 bags of organic cranberries. And you don’t have to chop them like the photo suggests below (these cranberries were for Cranberry Cheesecake Bars), neither you have to cook the jam. Instead, you just process your choice of berries or fruit in a food processor or blender with some honey (maple syrup), lemon zest and vanilla extract. It keeps well for weeks and…

Strawberry Mango Salsa Recipe

A dip with tortilla chips or a fish taco topping, this sweet and spicy Strawberry Mango Salsa is delicious! A perfect combination of sweet, spicy and fresh. Strawberry season is in a full swing and since we are getting bikini ready, dessert making kinda shouldn’t be happening. But don’t worry, there are so many other ways to enjoy fresh berries and fruit besides smothering them with pounds of heavy cream and sugar.

Blueberry Strawberry Salsa

I live in a blueberry country, so we eat a lot of blueberries. New studies show that freezing doesn’t damage their delicate anthocyanin antioxidants, so I freeze blueberries in vacuum sealed Ziploc bags. In winter we just eat them plain frozen, in summer fresh, by a handful or in salads – blueberry quinoa salad or kale blueberry salad. Blueberries are awesome and are considered a superfood! Full of antioxidants more than any other fresh fruit. They boost up your immune system and prevent infections. Blueberries keep you young, prevent…
