Quinoa Cakes

I love quinoa in any shape or form, even in slow cooker breakfast quinoa and quinoa granola bars. Quinoa makes amazing quinoa falafel, quinoa bread recipe and quinoa granola. It is (relatively) new superfood and for a good reason – full of protein, complex carbs and high in soluble fiber. And it cooks in 12 minutes versus 45 minutes for brown rice. Quinoa can be pricey if bought in small packages. That’s why I always buy a huge bag at Costco (=> my healthy Costco shopping list). Making quinoa cakes has…

Baby Kale Salad Recipe with Feta and Tomatoes

If you are bored of kale and quinoa (I am!), try baby kale! I am dead serious – baby kale tastes nothing like kale. Odd but true. Last week, this baby kale salad recipe was a breath of fresh air. With leftover brown rice, julienned sun dried tomatoes, sweet grape tomatoes from Mexico, toasted pine nuts, salty feta cheese, a crazy amount of fresh basil and homemade Greek vinaigrette. Nowadays, we use full grown kale for making smoothies and maybe an occasional sweet kale salad recipe because it is…

Sun Dried Tomato Soup

This post is brought to you by high quality German brand Braun and the juiciest summer beefsteak tomatoes ever. We just got back from Osoyoos. We did sooooo much in blasting +35C heat – laid by the pool for 2 days straight. That is it, my friends. I really enjoyed doing nothing and could do that for another week. On the way back we stopped at probably 10 fruit and vegetable stands coming back with 20 lbs of cherries, 10 lbs of peaches and a big bag of juiciest…

Healthy Pasta with Pesto, Tomato and Broccoli

Organic pasta mixed with blistered grape tomatoes, broccoli, sun dried tomatoes, all natural pesto and topped with freshly grated Parmesan cheese. Total time = 30 minutes, including the prep and clean up. This was delicious and healthy pasta! A few years ago, my kids couldn’t stand pesto. So, I stopped buying it and never made one. Actually, I went through a stage thinking it’s too fattening but these days I just know that moderation is key.

Quinoa Egg Muffins with Sundried Tomato & Spinach

These quinoa egg muffins are a complete breakfast on the go or a snack, filled with complex carbs from quinoa and healthy fats from flax or chia seeds. So easy and delicious, I recommend to double the recipe and freeze. Also try mini frittatas with spinach, and sweet potato egg bake with taco seasoning. Eating clean and working out, especially lifting, means 5 meals a day for me and Alex. Plus 2 kids => that is a lot of cooking and food. These quinoa egg muffins are very,…

Fall Quinoa Salad

Yesterday I went to my local farmers market and got lots of apples. Today was cooking and photo day for my new eBook – 30 Clean Dinners that comes out on January 5, 2014. Obviously, it was a daycare day for Adam. Amongst total kitchen chaos and my 2 month old broken dishwasher (again), I thought of my neighbours, and all of us of course. Our American friends celebrate Thanksgiving next week and I thought this fall quinoa salad with apples, cranberries, pecans & maple basil dressing would be perfect…

Spinach Stuffed Pork Tenderloin

Spinach stuffed pork tenderloin with low fat mozzarella cheese, sun dried tomatoes and basil. Sounds like little Italy to me and particularly it reminded me of a Caprese salad. But instead of using buffalo mozzarella we are going low fat.:) Pork tenderloin is one of my favourite animal based sources of protein. After the chicken breast of course. It’s lean, tender and is easy to cook. I obviously got tired of chicken breasts and it’s too cold to grill the pork tenderloin outside, so I decided to roast…
