Sweet Potato and Eggs One Pan Dinner

I woke up this morning at 5AM for Kyle’s hockey practice determined to make sweet potato and eggs for dinner, update our bed with new linens, keep organizing my closet and work out. In an effort to keep my brain happy, I have been going on walks and doing less DVD workouts. Maybe because my office and “gym” are now in the same location (basement) but I have been less inspired to workout indoors these days. However, today I did something different and tried a Youtube workout. Don’t…

Chipotle Sweet Potato Oatmeal Muffins

Ah, nothing feels better this morning than eating two (or three) sweet potato oatmeal muffins, with a cup of coffee (yes!) after sending boys to school. My breakfast made yesterday (or two-ten days ago) with oats and sweet potato. Workout done yesterday. Kids walked to school. I’m still in PJ’s. Seriously, I am in my days of mom glory and there is no going back. Yesterday I did something very much outside of my comfort zone. Life changing. It is a surprise about which you will hear early…

Chipotle Sweet Potato Hummus

Man, oh man, oh man…Sweet potato hummus in June? Why not! At last, summer is full of beach and backyard snacking. Last week our dear friends flew over for a short visit from Calgary. We met Jenn and Denis 9 years ago on the airplane on the way to Cancun. We both were running away from a small child, for a week, to the same resort. We borrowed their pen and then obnoxiously stalked them on a bus. The rest is history. Me and Jenn are a deadly…

Lime Peanut Sweet Potato Noodles Salad Recipe

On Monday I was supposed to make strawberry honey almond cake that I tested for Easter and posted on Instagram. It was Alex’s birthday. We are generally not the adults who love to celebrate our birthdays in a traditional way. We had an active weekend  exploring the beaches and hiking in Larrabee park. That is how we like to celebrate – do something new, fun (mostly outdoors), followed by a nice restaurant meal. I wish this didn’t cost a million. I checked on zillow. I have to remember to come…

Clean Eating Shepherd’s Pie

Well, my clean eating Shepherd’s Pie is kicked up a notch in nutrition using beans and less meat, sweet potatoes with skin on instead of white potatoes, and no dairy products. English people might raise their eyebrows but we are stepping outside the box. Truth is you could use white potatoes, parsnips or cauliflower mash on top. I felt like sweet potatoes because we had French Fries the night before. You could also add some butter or cheese to the crust so it browns a bit but I didn’t…

Twice Baked Jalapeno Sweet Potato Recipe

Creamy twice baked sweet potato stuffed with jalapeños, green onions, garlic, bacon and cheese. Main or a side dish, the combination of sweet and savoury will knock your tastebuds’ socks off. And all action happens inside the potatoes, right in the baking dish. No need to cut the tops off, scooping out the flesh and making a stuffing. Super easy, you will see. I love sweet potatoes for their affordability and health factors, not to mention the sweetness. Frankly, I do not have many recipes using them. Quite often…

Taco Sweet Potato Egg Bake

Breakfasts on-the-go are becoming a staple in my home. Me and Alex just love breakfast waiting for us in the fridge. I am also trying to make these breakfasts kid friendly because I wouldn’t let my kids have cereal every morning, even if it’s organic. Since breakfast has to include complex carbs my choice always turns to whole foods like oats, quinoa and sweet potatoes. I do not eat bread much, so quick toast isn’t an option. I have never incorporated sweet potato in a breakfast dish before and was absolutely…

Sweet Potato Pizza Crust

Sweet potato pizza crust made with whole foods, full of good for you carbs and requires no food processor. No flour mess either and you can actually cut it like real pizza and hold the slice. Your fingers even will be greasy but with heart healthy olive oil. I don’t know if you think this recipe is weird or cool, but I think this pizza turned out awesome despite my (maybe yours) scepticism!!! I know Friday is considered a pizza night in most North American households. It never happens in…

Sweet Potato Skillet Tex Mex Style

Are you tired of my orange skillet yet?! I might have got too excited to cook with it because I just love quick dinners. I’ve been hunting for this enamelled cast iron skillet for the past six months and finally got it for $50. Now we are big friends. And be prepared to see three photos of the same skillet from left, right and top. I got too excited cooking my sweet potatoes and forgot to snap any shots in between. This sweet potato skillet is a big fat…

No Peel Healthy Roasted Vegetable Mashers

Creating classic yet healthy all time favourite mashed “potatoes” recipe, I had a few things in mind: Thanksgiving is upon us. If you don’t know, Thanksgiving in Canada is celebrated in the 1st half of October vs. at the end of November in the US. Every time I start looking for pumpkin in American stores at the end of August, I get weird blonde looks. I hate peeling vegetables. I wanted the mashers to be yellow. I was going after light, airy and fluffy texture. That’s why I…
