Rice Stuffed Tomatoes with Enchilada Sauce

I hope you are not buying tomatoes at supermarket in September. OK, if you are, I hope you are making sure they are not from Mexico, in September. Because right now is prime tomato harvest season near you. Actually, ALL fruits and veggies coming down with a blasting speed, making me completely mad woman because I want to buy them ALL, and in fact I seem to be doing just that – see my last farmers market haul. Rice stuffed tomatoes is entirely European concept. Born in North…

Chicken Breast with Tomatoes and Garlic

Quick and healthy chicken with fresh tomatoes that are in their prime ripeness end of August – beginning of September, and that I can’t stop buying during my farmers market haul every week. So juicy, sweet and tender local tomatoes are nothing like supermarket’s “cardboard” tomatoes we are about to experience, so hurry up and eat them while you can. If you need help with eating tomatoes (half of mine disappear as slices sprinkled with salt), check out my tomato and red onion salad, lettuce tomato cucumber salad…

Tomato Feta Pasta Salad

The best part about this tomato feta pasta salad is that it tastes juicy, flavourful and fresh any time of the year. End of summer, I use local beefsteak or roma tomatoes, and in winter green house grown tomatoes on the vine are flavourful and sort of affordable. If you are a Costco lover like me (my healthy Costco shopping list), you can buy that big tub of grape tomatoes (often just $1-2 more than conventional) and make this healthy pasta salad with feta cheese, bell pepper, parsley…

Tomato and Red Onion Salad

Take full advantage of local tomato season before we are forced to eat supermarket tomatoes. My favourite way to eat this fruit is with salt and pepper, and this tomato and red onion salad is a direct reflection of my tastebuds – any kind of tomatoes, generous amount of sliced red onion, a tiny garlic clove tossed in Greek yogurt, salt and pepper. That’s it, simple like my simple tomato salad. So fresh, juicy, delicious and takes 10 minutes to make! For this tomato salad, any kind of…

Pasta with Zucchini and Tomatoes

This pasta with zucchini and tomatoes is nothing short of amazingness, a 20 minute healthy summer dinner with any short pasta cooked al dente, zucchini, grape or cherry tomatoes, garlic and fresh herbs. It keeps your kitchen cool and uses an abundance of produce in season (I always seem to have more than I need on hand). Bursting baby tomatoes create a delicious sauce base combined with fresh garlic and basil. I couldn’t stop eating this pasta! I got the idea for pasta with zucchini and tomatoes from…

Zucchini Bake with Tomatoes, Garlic and Parmesan

We love Parmesan zucchini sticks and I have baked tomatoes topped with Parmesan cheese a number of times. So, I thought why not to combine both with some garlic and make a zucchini bake?! Cheese with garlic is always a winning combo. In Ukraine, garlic and dill go together like lime and cilantro in Mexico. Great success! This zucchini tomato casserole literally took me 5 minutes of chopping and other 25 minutes I was working on grilled lemon rosemary chicken, while zucchini bake was in the oven.

Chickpea Avocado Salad

This chickpea avocado salad is the best chickpea salad recipe I ever made – with tomato, avocado, cucumber and simple dressing consisting of olive oil, salt and freshly cracked pepper; with red onion slices big enough for kids to pick out and adults to enjoy. The salad is so hearty, it can be a main course for lunch, mixed with quinoa or pasta for dinner, or a potluck star. This chickpea avocado salad recipe is similar to my other hearty salads recipes: Mango Black Bean Salad, Creamy Mexican Kale Salad or…

Healthy Pasta with Pesto, Tomato and Broccoli

Organic pasta mixed with blistered grape tomatoes, broccoli, sun dried tomatoes, all natural pesto and topped with freshly grated Parmesan cheese. Total time = 30 minutes, including the prep and clean up. This was delicious and healthy pasta! A few years ago, my kids couldn’t stand pesto. So, I stopped buying it and never made one. Actually, I went through a stage thinking it’s too fattening but these days I just know that moderation is key.

Vegetable Florentine Pasta

How can you “eat your veggies” and also enjoy a bowl of pasta? Just make this florentine pasta recipe where fresh garden meets whole grains in a very generous amount of flavourful Greek yogurt based sauce. Because what pasta is good without sauce unless you are a 5 year old?! I won’t lie, there was a period of time when carbs were my enemy. I cooked spaghetti squash mac and cheese and baked cauliflower biscuits. And don’t get me wrong, these dishes are delicious but I am way more…

Sautéed Garlic Broccoli with Tomatoes

A rainbow of red and green in this sauteed garlic broccoli recipe doesn’t make me miss Christmas. The opposite – the smell and pictures sent me almost into tears realizing “oh, how I miss you, summer!” (I know I have big problems in my life, I know). Evening walks, naked legs and light. As much as I love holidays, I’m so happy they are over because the chaos of kids at home and visiting family, which we all know is good in moderation (sorry, mom and boys). The past few days, I…
