Easy Turkey Meatballs

I think I can speak for everyone and say “We all love meatballs!”. When I told my kids I’m making meatballs for dinner, the eyes exploded with fireworks. I recently was at Ikea and saw their new vegetarian meatballs, and then their traditional meat meatballs which apparently are now made with more sustainably raised meat. Thanks for trying, Ikea! So, I got “turned on” by Ikea meatballs. Plus it is a true Fall weather which begs for warm cozy food aka easy turkey meatballs.

Zucchini Lasagna

Comfort food lightened up with zucchini “noodle sheets” and made with simple 7 ingredients. I know there are many zucchini lasagna recipes out there but I thought I would share my clean eating version simplified with store bought organic tomato sauce and without any extra steps to remove moisture from zucchini. Everything cooks in one pan and this recipe is quick enough to prepare even on a weeknight.

Well, my clean eating Shepherd’s Pie is kicked up a notch in nutrition using beans and less meat, sweet potatoes with skin on instead of white potatoes, and no dairy products. Spaghetti Squash Bake with Turkey and Cheese

Kale Turkey Pasta Bake

Whole grain pasta, fresh kale (or spinach), extra lean ground turkey topped with a reasonable amount of part skim mozzarella cheese and baked until golden.
