Sweet Potato Shepherd’s Pie

Well, my sweet potato Shepherd’s pie is kicked up a notch in nutrition using beans and less meat, sweet potatoes with skin on instead of white potatoes, and no dairy products. English people might raise their eyebrows but we are stepping outside the box. Kale Turkey Pasta Bake

Whole grain pasta, fresh kale (or spinach), extra lean ground turkey topped with a reasonable amount of part skim mozzarella cheese and baked until golden. As I am writing up this ground turkey stew recipe and finishing the last bowl of it, I’m thinking I should make stews more often. Definitely! Stew is healthy and quick stovetop meal that keeps well refrigerated for days.
