Healthy Pumpkin Brownies

I am such an idiot. The other day while whisking these healthy pumpkin brownies I kept thinking how much I am obsessed with dark chocolate. And how much I love to photograph dark chocolate. So, I took like 50 shots of falling batter, pouring batter and cute little chocolate chips. Just to delete them all the next day. Yeaaaaaaaaaaaah… I also lost a bottle of avocado oil somewhere between Costco and home. Who loses food while driving?! Me! We might find it 6 months later in a trunk somewhere…

Whole Wheat Pumpkin Bread

Aaaand today is the first full day of Kindergarten. Aaaand my organically fed child is sick at home since Friday. Sigh. By this point I am starting to think I might have a kangaroo’s DNA in me. But I am intending to make the best out of this rainy sad Monday by embracing my cleaning lady, doing a killer HIIT workout and blogging what I can. I barely slept last night (just overwhelmed) but I will set that aside too. A few cups of black tea did their…

Banana Zucchini Muffins with Chocolate Chunks

There are 3 good reasons why you would want to sweat in the kitchen in July’s blasting heat. First of all, your freckling bananas are probably dying to be used. You are walking around the fruit basket frantically thinking “What to do with you? What to do?”. Secondly, I can guarantee you have a zucchini in your fridge you have no idea what to do with. Thirdly, you need snacks. More snacks. Who doesn’t need snacks? It is July. You are frantically running around trying to check off items on…

Whole Wheat Flour Banana Bread

If you can find a more perfect whole wheat flour banana bread recipe sweetened only with 1/3 cup maple syrup/honey and not using a cup of vegetable oil, feel free to leave it in the comments. Your perfect banana bread should be moist and the top should be cracking, gloss-ing and sticking. And when you take a bite it melts in your mouth. That in my world is a perfect healthy whole wheat banana bread and you are looking at it right now!

Apple Oatmeal Bars with Honey

Well, hello, honey! Raw unpasteurized honey drizzled on top of crumbled pecans, covering juicy Granny Smith apples and moist oat and whole wheat crust. Delicious Fall inspired Apple Oatmeal Bars that remind me of Bear Paws cookies. You know those?! Moist and soft and for some reason my kids never liked them back in a day I used to buy store bought cookies. I loved them though, so this clean eating version of a soft bar hits the spot. Each Apple Oatmeal Bar contains only 1 tablespoon of sugar…

Lemon Zucchini Muffins

These Lemon Zucchini Muffins were light, lemony and so moist. Made with whole wheat flour, plain yogurt and zucchini. Extremely delicious! For this recipe I got inspired from my neighbour who makes this recipe every summer. Of course, my end result ended up being a completely different thing.:) Aren’t many of us known for that?!

Healthy Zucchini Brownies

I baked these healthy zucchini brownies 3 times last week. Everyone loved them so much but needless to say we are “brownied out”. The rest went to the freezer. Made with coconut oil, raw honey and whole wheat flour these Clean Eating Zucchini Brownies are super healthy. And I’m the one who doesn’t run away from organic wheat.:) It was my first time making zucchini brownies but after loving Black Bean Brownies so much I had a feeling I would love these too. Black bean brownies are very fudgy…

Clean Eating Blueberry Muffins

These blueberry muffins made with spelt flour (whole wheat works too), applesauce and fresh blueberries came out fantastic!!! I have to admit I’m MUCH better baker today than even last year. As I was mixing the batter I was sceptical as my last year’s healthy version of blueberry muffins was…weird. That is me being honest. Back then I was still in a place trying to figure out my diet and cooking style. I looked at that recipe today again and cringed. What for is that banana?! It won’t be noticeable. And…

Whole Wheat Drop Biscuits

I loved the biscuit topping in the Fruit Cobbler I made a few months ago so much that I decided to make a savoury version to serve with soup a few days ago. I know it is summer and hot but I still use the oven regularly. I can’t imagine not turning on the oven or stove in summer (this year I got smarter and installed a portable AC in the kitchen). Are we going to eat chia pudding till Halloween or what?! We do not eat much meat…

Clean Eating Fruit Cobbler Recipe

This wholesome fruit cobbler recipe will become a staple in your menu this summer, especially when you have more fruit and berries than you know what to do with. I specifically named it “Fruit Cobbler” because you can use any fruit and berries, literally. I’m thinking Pacific Northwest blueberries, Okanagan peaches, neighbour’s plums, hundreds of figs and apples from my garden, wild blackberries and over ripen bananas. Apricots, pears, rhubarb, cherries – you name it! Here in Vancouver, BC our summer produce choice is insanely amazing. You could also…
