Lazy Baked Zucchini Parmesan

The truth is it is August and I have been barely cooking the past month. Mostly because of kids at home, trying to cram in all summer bucket list activities in the short 2 months, abundance of ready to eat summer produce and an inability to switch from reading a book to do house chores. The truth is the more I relax, the more I want to relax. The more I sleep, the more I need to sleep. On the days that I have to catch up on laundry,…

Lime Basil Grilled Zucchini

I love to grill zucchini with whatever I have on hand. Usually we do garlic, oil, salt and pepper. I am sure you completely understand why. But I have done it so many times and plus I have this wonderful job “ifoodreal” that forces me to barely ever eat the same food twice. Joking, I re-cook my own recipes. So, I was thinking curried grilled zucchini which could be wonderful or not. I have been spending many nights on our patio inhaling smells from next door, as you can…

Chocolate Chunk Banana Zucchini Muffins

There are 3 good reasons why you would want to sweat in the kitchen in July’s blasting heat. First of all, your freckling bananas are probably dying to be used. You are walking around the fruit basket frantically thinking “What to do with you? What to do?”. Secondly, I can guarantee you have a zucchini in your fridge you have no idea what to do with. Thirdly, you need snacks. More snacks. Who doesn’t need snacks? It is July. You are frantically running around trying to check off items on…

Zucchini Mac and Cheese

On Wednesday, I had a hard time getting off the couch to make this zucchini mac and cheese. But again there was nothing for dinner and I knew this 15 minute dinner had a big chance of being a winner. I love my job but at times I envy office workers typing 8 hours away on the computer. I cherish a few hours a day I get to work on laptop while sipping tea. Majority of my day is spent on feet – getting kids out the door,…

15 Minute Lemon Dill Shrimp, Zucchini & Peas

What a great true summer weekend we have had! How was yours? On Friday temperatures have soared up to +30s C and we couldn’t get enough. I went for a walk (Friday night) and run (Saturday morning which was dumb-dumb because of cottonwood allergies and crazy heat) on the dykes. Hit the farmer’s market (kids lost iPad privileges permanently) and fireworks with the family on Saturday. And on Sunday we cleaned up the yard and spent afternoon till sunset at the lake. At home I had a glass…

Stovetop Zucchini Noodles Lasagna

No, there was no zucchini noodles lasagna or pasta lasagna on our dinner’s menu growing up in Ukraine. The closest I could get the taste of Italy was by hiding in a dark cold room with a knife and slicing leg of prosciutto my uncle brought from Italy. I still remember it clearly hanging juicy on a door. How can a 9 year old resist that?! So, now I know if I could slice food hanging in the air in the dark with a paring knife, my 9 year old…

Pesto Chicken Zucchini Noodles

So, I finally gave in and got a spiralizer before Christmas. We do gifts for ourselves. Next on the list is a trip to Lululemon. I haven’t bought a piece of clothing for myself since August. After months and months of debating whether I need another kitchen gadget and liking all hand spiralizers so-so, I saw a countertop spiralizer at my grocery store for $25. That, my American friends, is a BIG DEAL because in Canada everything is so much more expensive and harder to find than in the US.

Lemon Zucchini Muffins

These Lemon Zucchini Muffins were light, lemony and so moist. Made with whole wheat flour, plain yogurt and zucchini. Extremely delicious! For this recipe I got inspired from my neighbour who makes this recipe every summer. Of course, my end result ended up being a completely different thing.:) Aren’t many of us known for that?!

Summer Fried Brown Rice

I love making fried rice because sky is the limit in terms of ingredients and it is a great “fridge cleaner”. I made one mistake this time by making it in a wok because I simply forgot to use a large skillet to make the rice crispy. In a wok, it comes out more steamed than fried. And crispy rice is the most fun part – crunchy, oily and fried previously cooked rice. It can be fried in a wok in restaurants because the heat is so high but at home…

Healthy Zucchini Brownies

I baked these healthy zucchini brownies 3 times last week. Everyone loved them so much but needless to say we are “brownied out”. The rest went to the freezer. Made with coconut oil, raw honey and whole wheat flour these Clean Eating Zucchini Brownies are super healthy. And I’m the one who doesn’t run away from organic wheat.:) It was my first time making zucchini brownies but after loving Black Bean Brownies so much I had a feeling I would love these too. Black bean brownies are very fudgy…
