Friday Night

During the day, I made a huge pot of chicken noodle soup because I knew I would be too tired to cook on the weekend, and it would last u 3-4 meals. Yep, I was right. Before heading out to my Stitch and Bitch, I had a bowl.

Would you like to know how I make the broth clear and how I make a big pot of organic chicken stock that costs 10 times less than even at Costco?

I had one beer. I lately like beer because it doesn’t give me a headache.

Then one glass of wine while behaving horribly.

Then I switched to club soda and had some tortilla chips with my new test, healthy queso dip (everyone loved!), spinach dip and artichoke dip. I wasn’t hungry and a bit of everything was perfect.

The night with the girls was fun, full of completely unexpected events. Let me tell you, some moms in a kindergarten lineup are not what they seem to be. What a night of experiences I have never had before LOL. Mom’s night out, my friends. There is always one though, right?! This time not me. I grew up.

Saturday

Started with coffee. Yum.

For late breakfast, I made Smitten Kitchen’s almond cherry dutch baby but with whole wheat flour and maple syrup. Had 2 slices with my grass-fed cream top yogurt. It was a hit. I promised boys a giant pancake and they were impressed.

Late snack was leftovers of my queso dip. Because we had a late breakfast, then went for a walk and had a very late lunch at 4 PM.

Then I pulled out leftovers of my chocolate goat’s milk ice cream from that week. OMG, so good! I had more than in this bowl. See, that ice cream has been in my freezer for like over a month and I didn’t touch it. And now I had a craving and I ate it. It is all about balance and moderation. No need to starve and deprive your only life and body you get. I can’t help but think about that.

I couldn’t resist but have a piece of kids’ Subway cookie they got as a treat. A mix of butter and melted sugar is irreplaceable. So good but OMG so sweet. That was plenty.

I had Subway coupons from kids’ hockey and decided to execute them on Saturday. I had no energy to cook, been cooking every single day. What was funny is how even bottled water they got as part of their meal was exciting for them – it is water in a bottle, not from home. Me and Alex laughed about our pop “deprived” children all the way home walking from Subway.

I wasn’t too hungry for dinner because of late lunch, so this is what I had at our friends’ house: nachos, guacamole and refried beans.

Then we split a bottle of wine between four of us while playing a game for horrible people LOL. If I could sum up this weekend, I would say: Google and ice cream. I spent 3 days Googling words and upgrading my urban dictionary. I’m sorry, they do not teach you American slang in European schools. Plus, me and Alex started watching “The Good Wife” and that made me Google constantly the legal terms.

Very educational weekend haha.

Sunday

Sunday morning, I had coffee with chocolate dutch baby I made on Saturday. I used whole wheat flour and coconut oil. I bet it was better fresh but I didn’t complain about my ready made breakfast on Sunday.

Alex made a protein green smoothie. I stayed in bed till 4PM reading. First of all, I find a hard time leaving my bed since I bought 800 thread Egyptian cotton sheets and a new quilt. I feel like at Four Seasons. OMG worth every penny! Even mattress is firmer. Secondly, I got my period on Saturday which is very painful for me since I had Adam. Like I have to take Tylenol so painful, heavy and I feel so tired. So, I was happy to be in bed, even though Adam was next to me with a bazillion of questions and sounds on iPad.

Alex was out with Kyle for hockey for half a day, so nobody to bring me lunch. I went downstairs and grabbed myself tea, apple, candied ginger, coconut snack and pecans. It did the job. And back to bed. OMG, I am dreaming of getting back into my bed the moment I get out of it. It is so luxurious!!!

By 4:30PM, I couldn’t ignore the fact that chicken noodle soup was gone and frankly everyone was sick of it. I showered and came downstairs only to find a kitchen disaster, which seems to never end. I accepted it by now as part of life because our house is not a show home, we live here. But I couldn’t deal with it without a glass of wine LOL.

I promised boys shrimp tacos and I made them, with El Paso white tortillas that Alex bought – there was no organic corn tortillas, then we figured out Alex doesn’t know the difference between corn and flour tortillas. As Kyle pointed out “It’s just one time and we won’t die”. Yep, if Alex remembers what are corn tortillas. I should stock up like on 5 packages. I love tacos but there are never leftovers, and this is what happened. They were so good – I made coleslaw with yogurt and shrimp with cajun spice.

I had a bottle of beer because tacos.

Then I polished off the goat’s milk ice cream and even a bit more coconut milk vanilla ice cream. I had crazy sweet tooth cravings this weekend – must be my period.

And orange at the end while watching “The Good Wife”. We can’t stop watching it, so addicting. Have you watched?I know we might be so behind the masses, but there was truly no time to get addicted to any series before. I think Peter and Alicia are such a hot couple, even though he cheated on her, I find him super hot (and her too!). Even though he is way too old for me LOL.

Now I better go work out to burn off all that sugar I ate, I’m gonna do this 20 minute HIIT. Then I’m gonna make a huge pot of my split pea soup, tidy up the house/kitchen after the weekend and tonight we have a far away hockey game, so there goes a date night with my boys (I promised them to stop for a treat on the way there).

    Thanks for this post that gave me two dinner ideas based on food I have in the freezer. I resolved this year not to waste food, so I am buying less and using what I have on hand more. So far it’s working. I love that you stayed in bed until 4:00! That must have been heavenly!
