Yesterday was a Family Day here in BC, combined with 5 days of no school and previous 2 snow days, feels like there is never any school in this country. We took advantage of a beautiful warm sunny day and went skiing which was fantastic. The drive was beautiful, we skied in sweaters and Alex took over our 6 year old (after my Sunday’s mental breakdown haha) so it meant I could ski like a grown-up. Alex’s verdict was “OMG he never stops talking”. YEP.

Today is Valentine’s Day and we do not have special plans. You know, just another dinner (no idea what is for dinner yet but maybe shrimp tacos for the blog?!), laundry, grocery shopping, cooking, swimming lessons and kindergarten immunizations (Alex took a day off for this because I’m not doing that).

Before I run away to the store, here is a recap of what I ate this past weekend.

Friday Night

On Friday night, I made this AMAZING one pot Mexican rice with organic jasmine brown rice (I found it in an ethnic aisle at Superstore and we LOVE it), zucchini, corn, black beans and diced tomatoes. OMG it was such an easy vegetarian dinner. I will post it this week.

I did have a small glass of wine after and my healthy chocolate ice cream for dessert. It is so easy, and delicious, and made only with 3 ingredients! No added sugar. I posted the recipe on Instagram stories as I was making it along. It was fun. Also doing Instagram Live was so kinda fun last week.

Saturday

For breakfast, Alex made eggs with greens, half Silver Hills bagel with butter on a side.

Coffee with local milk from my organic food haul. I have read this book and it is FANTASTIC. A woman in mid forties with 2 grown up daughters gets pregnant from a man who is 10 years younger, and her husband has had a vasectomy. It is a great story of love, patience, forgiveness and simply life. I couldn’t wait to find out where she ends up.

For lunch, I had leftover Mexican rice.

I was snacking on these crackers from Costco. Alex loves them and they are hard to resist.

Green smoothie. I also had apples and bananas for snacks in between during the weekend.

A glass of wine in the afternoon before going out. I lately find myself enjoying a glass of wine around 5PM rather than after dinner on the weekend. 2 main reasons:

  1. My 10 year old’s hormones and 6 year old’s tantrums are getting harder to handle for me, I’m running out of patience. It just doesn’t get easier. This winter is driving everyone nuts.
  2. I don’t sleep well after wine, even after 2 glasses. It has to do with tannins, I guess. So I find, if I have a glass not a few hours before bedtime but earlier, I sleep better. Alex feels the same, actually, and he barely drinks. We just watch The Good Wife now all nights long LOL.

Overall, I have been struggling with sleep the past month like never before. And overall I don’t feel the greatest. I think it is a combination of winter blues (the main reason) and maybe our mattress – every morning I wake up feeling beaten up. Alex says we need a new mattress but it’s only 5 years old. But I suspect it just wasn’t a great mattress from the start because Alex has been complaining about it forever. The springs seems to be hurting our bodies and it is just too soft.

Can you recommend a good firm mattress, like in nice hotels?

I turned around the mattress and decided to cut back on coffee and wine to see if my sleep improves. I decided to cut back coffee for now like before and drink wine maybe once a week. I just can’t stand this time of the year and feel like I’m so bored and keep drinking coffee in the morning and wine in the afternoon. I just can’t stand this snow and cold. Ugh. We are almost done and I need to remember to go away in February for a month next year.

We went out with friends for Chinese to celebrate the Valentine’s Day. Last time I ate Chinese was 12 years ago. I had a bit of noodles, Kung Pao chicken and ginger beef. I had a second smaller serving with a bit of white rice and more ginger beef, which was my favourite. It was good Chinese food but next time I would order something less saucy like ginger beef. I kept “fishing” it from the sauce. I wasn’t crazy about the amount of peanuts in the chicken. It was a nice break from cooking dinner and eating something different. We drank water and then maybe a 3 oz of wine after at home which I barely finished.

Sunday

We went for a walk on Fraser river which was gorgeous! I can’t wait for warm sun.

We had dinner at our friends’ housewarming party. These were a few plates I had. I had more sushi and cheese. It was all great and delicious. A bottle of beer and maybe a glass of wine. That’s it. We were going skiing next day so we left early to go to bed and didn’t overeat or over drink.

    Cool, we are on the Valentine’s Day is also skied, (Yaremcha). and now I know what to prepare for next weekend.

      I remember the name Yaremcha as a popular winter destination but I don’t think I have ever been there. Maybe I have but life in Ukraine after 17 years in Canada is a blur…I never had money to ski in Ukraine back then. I hope you enjoy my dishes.:)

    Olena, hang in there with those winter blues. I have trouble every year with the short winter days and I’m in the southern US. I can’t imagine a Canadian winter. I find burning candles and playing “upbeat” music helps lift my mood.

    How did you like the Costco protein bar? Haven’t tried that one yet.

      I do the same – listen to music and run my diffuser. I also read in bed to hide away from this nonsense lol. So, I moved away from this stupid Canadian winter thing from Calgary to Vancouver. Imagine Seattle – warm, rainy and green in winter, same in Vancouver. However, this winter this stupid La Nina showed up with her snow and it has been suicidal last 2.5 months. I think we are over that shit storm though, plus I’m leaving to tropics for a month in only 15 days. So, I care less what La Nina does from now on.
      Simply protein bars are just OK. They are not bad, neither they are super tasty. They leave an after taste of stevia or soy, I have no idea what the heck that is. However, they do the job of killing hunger on the go without sugar and they are all gone from my pantry now, so I guess they are good.:) Plus they are cheap.:) Hope this helps.

    We here in the Midwest of the US have had a full week of sunshine and 60 degree weather ending with two days of 70 Fahrenheit. 21 celcius? If I looked that up right… it was a wonderful vacation from winter! But short lived, we are being forecast snow over the weekend and I am sure will make us grumpy.

      I have heard. Same here – it warmed up, the snow has melted and it’ sunny. Smells like spring. Hope no more snow for us. You keep strong. I’m going last time skiing this Saturday to say “good bye” to snow. Supposed to be a warm sunny day and I can’t wait to fill my eyes with never ending mountain views. Life is short.

    I tried a good clean protein bar you may like. It’s made by “Primal Kitchen”. The one I had was “Dark chocolate almond bar”. It’s made with grass-fed collagen and only 3 grams of sugar. It’s the only bar of theirs I’ve tried so far. It was really enjoyable. Kicked the sugar craving and was satisfying.

      Nice, that’s a good one. It is the same company that makes mayo, I have heard about them. You guys are so lucky to have such a variety of healthy options in the US. In Canada selection is like 1/10th of yours, and I don’t get why. People would kill for Trader Joe’s in Vancouver. I will keep my eyes open for it but hopes are very little.
