I might be not a fan of Instant Pot but I definitely love healthy one pot meals made in a dutch oven or deep skillet. One pot meals mean quick and simple recipes, and less dishes to work with and clean. When I make one pot meal, I usually end up using many pre-cooked pantry items like tomato sauce, spices, canned beans (I cook my own and freeze => how to cook dried beans); freezer items like frozen vegetables and meats; then add dried goods like quinoa or whole grain pasta with extra liquid; and garnishes like herbs and cheese at the end. To me, healthy one pot meal means a balance of protein, complex carbs and vegetables; occasionally lower in carbs or protein.:) Enjoy!

These all look so delicious. Too many to choose from! I don’t know where to start. I do love one pot meals so I’m always keen to try new one pot recipes. I think the healthy turkey chili might be a good one for me to try first.
