This No Bake Peanut Butter Pie is smooth, creamy and healthy. Made without cream cheese, cool whip or graham crust, watch it disappear at any gathering. It is that good!

Pie Crust:

  • 1 cup walnuts or pecans
  • 1 cup cashews
  • 2 tbsp honey or maple syrup
  • 34 tbsp any milk (I used almond)
  • 2 tsp pure vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp salt

Peanut Butter Filling:

  • 1 cup plain peanut butter, unsweetened and unsalted (if using salted omit salt)
  • 3 medium bananas, ripe (very yellow)
  • 3 tbsp any milk
  • 2 tsp pure vanilla extract
  • 1/4 tsp salt
  • 1/3 cup dark chocolate chips, mini or regular (optional)

  1. In a food processor, add 1 cup walnuts, 1 cup cashews, 2 tbsp honey, 2 tbsp milk, 2 tsp pure vanilla extract, 1 tsp cinnamon and 1/4 tsp salt.
  2. Process until a ball of dough forms, stopping and scraping the sides of the bowl. Start with a few tablespoons of almond milk and add more if necessary to bring to a desired consistency. Be careful not to over process the crust into a nut butter.
  3. Transfer “the dough” to a 9″ pie dish and flatten on the bottom and sides with your hands to make a pie shell. You can make a pretty rim using the fork.
  4. Give food processor a rinse, wipe with a towel and add 1 cup peanut butter, 3 medium ripe bananas, 3 tbsp any milk, 2 tsp pure vanilla extract and 1/4 tsp salt.
  5. Process until smooth, pausing and scraping the sides of the bowl.
  6. Pour filling into the prepared crust and smooth top with a spatula.
  7. Sprinkle with chocolate chips (optional), cover with plastic wrap and freeze for 3-4 hours or until frozen.
  8. Thaw on a counter for about 30 minutes before slicing and serve.

Store: Freeze covered for up to 3 months. Do not refrigerate. Thaw for 30 minutes before serving.

  • Nuts: You want to use softer nuts like walnuts or pecans and cashews to make the crust. Hard nuts like almonds won’t work as good.
  • Peanut butter: Make sure to use plain peanut butter. If you buy organic, you are 100% guaranteed to have only peanuts listed as an ingredient. I also used unsalted but if you happen to have salted one, just skip salt in the recipe.
  • Bananas: You would want ripe bananas with bright yellow skin. Some brown spots are fine. Just make sure they are not over ripen or green.
  • Milk: Any milk works. It is used mostly to help bind ingredients together.
