30 healthy one pot vegetarian meals is a roundup of easy hearty dinners including pasta, quinoa, beans and tons of vegetables that cook in one pot.
I grew up in Eastern European household, where every lunch and dinner were centred around meat, if finances allowed. My mom still can’t imagine a meal without meat. Today, average American consumes 210 lbs of meat per year. I’m determined to reduce that amount with this delicious collection of one pot vegetarian meals, where plants are the star of the show, often with a sprinkle of cheese, a dash of soy sauce, and spoonfuls of flavourful dried herbs and spices. Vegetarian meals are delicious, filling and far-far from boring. You don’t have to become vegetarian or vegan in order to be healthier. Just eat more plants, less animal products, and tomorrow you will be already one step ahead than yesterday.
