Shepherd's Pie  with  Cauliflower  Topping

Shepherd’s Pie with Cauliflower is a lightened up version of the classic comfort food favorite! It has ground meat, sauce, veggies and delicious low carb, cheesy cauliflower mash on top.

Cauliflower Ground meat Chickpeas Frozen vegetables Cornstarch Low sodium stock Any milk Cheese

Ingredients

Cook chopped cauliflower and whole clove of garlic in a pot with water for 10 minutes or until fork tender. Then mash with hand blender.

Cook ground meat in skillet over medium heat by sauteing garlic first and then meat, stirring often and breaking into pieces. Pour slurry of stock, milk, cornstarch into skillet and simmer until thickened.

Add frozen veggies and chickpeas to the skillet with meat sauce. Dollop cauliflower topping on top of filling, spread with spatula.

Sprinkle with cheese and broil for 5 minutes. Rotate if necessary to ensure even broiling. Serve hot!

Store

Refrigerate for up to 3-5 days. Reheat in small baking dish and bake at 375 degrees F until warmed through, about 10 minutes. Freeze up to 3 months.
