Healthy Pumpkin Bread

This Healthy Pumpkin Bread recipe is naturally sweetened, made with whole grains and is full of warm cozy spices. Moist and fluffy, it uses an entire can of pumpkin puree!

Whole wheat or spelt flour Pumpkin puree and oil Maple syrup and eggs Pumpkin pie spice and cinnamon Baking powder, baking soda, salt Pumpkin seeds, optional

Ingredients

In large bowl add eggs, maple syrup, oil, and pumpkin puree.

Continue adding to the bowl pumpkin pie spice, cinnamon, baking powder, baking soda and salt.

Whisk ingredients until well combined and no lumps remain from baking soda or baking powder.

Measure spelt or whole wheat flour and then add to the bowl and stir gently to combine.

Pour batter into prepared loaf pan and level gently with spatula. Sprinkle with pumpkin seeds on top

Bake for 50-60 minutes our until the toothpick inserted in the middle comes out clean.

Remove from the oven and let cool for 10 minutes. Then transfer to a cooling rack to cool off more. Cut into 10 slices with serrated bread knife. Enjoy!

Store

Store covered in a cool dry place for up to 5 days. Refrigerate covered for up to 7 days. Freeze in an airtight container for up to 3 months.
