Ingredients You Need

Preheat oven to 350 degrees. In a medium roasting pan place turkey roast. Make 10-15 inserts with knife. Stick garlic slice into inserts. Rub with oil.

Sprinkle with salt and pepper. Pat roast with rosemary, then sprinkle some. The goal is to coat the roast in herbs. Bake uncovered for 90 minutes.

Remove from oven, meat thermometer should read 160 degrees F. Cover and rest 10 minutes. Internal temperature will reach 170 degrees F.

Make gravy. Scrape and shake rosemary and burnt pieces from removed casing into the pot. Add water or broth, white wine, butter, salt and pepper.

In small bowl, add a bit of gravy from pot and cornstarch. Whisk well,  pour back into the pot and whisk until gravy starts boiling. Slice turkey.

Serve warm at a Holiday table with traditional sides of mashed potatoes and gravy.

Refrigerate roast whole or sliced in an airtight container for up to a week. It tastes so good cold. And warm with gravy.
