Healthy Blueberry Crumble Bars

Healthy Blueberry Crumble Bars are wholesome, decadent, and packed with juicy blueberries for a fresh and fruity treat any time of the day. They swap out regular white flour, sugar, and butter for healthier substitutes for a guilt free treat!

Oats Whole wheat flour Maple syrup, cane or coconut sugar Baking powder Cinnamon Salt Egg Coconut oil Applesauce Blueberries Orange zest Pure vanilla extract Cornstarch

Ingredients You Need

Prepare the pan: First, preheat the oven to 350F/176C, and line an 8×8-inch baking dish with parchment paper and cooking spray.

Combine crusts’ dry ingredients: In bowl, add oats, flour, sugar (if using maple syrup, add that with liquids), baking powder, cinnamon, and salt. Mix well.

Add wet ingredients: Add egg, coconut oil, maple syrup (if using) and applesauce.

Mix: With spatula, changing to  hands towards the end until everything is incorporated. The dough should be moist in one piece, not crumbly.

Prepare blueberry crumble filling: In medium bowl, combine blueberries, maple syrup (or sugar), orange zest, vanilla, cornstarch, and mix.

Assemble bars: Press ¾ of crust dough into prepared baking dish (press tightly to compact it into a nice ‘cookie’-like layer).

Assemble bars: Spread blueberry filling over top before crumbling remaining crust dough over top in small crumbs.

Bake the blueberry crumble bars: Bake for 45 minutes, then remove from the oven and cool completely before slicing into 16 squares.

Store

Store in a cool dry place for up to 3 days, refrigerate in an airtight container for up to 5 days. Freeze: In an airtight container for up to 3 months.
