Ingredients You Need
Cook pasta according to package directions. Drain, reserve 1 cup of pasta water. Add olive oil and garlic to large skillet on medium heat.
Add 1 tbsp pesto, tomatoes and stir. Cook for 1 – 2 minutes, stir and cook another 1 – 2 minutes. Move to the side of the skillet.
Make sure the empty side of skillet is positioned directly over heat. Add 1 tbsp pesto and broccoli, stir and cook for 4 minutes, stirring once.
Remove skillet from heat, add remaining pesto, sun dried tomatoes, half Parmesan cheese, salt, black pepper, red pepper flakes and pasta.
Add pasta water. Stir gently to let flavors incorporate. Do not cover as broccoli will become mushy.
Sprinkle with remaining Parmesan cheese. Serve hot!
Refrigerate in an airtight container for up to 3 – 5 days or freeze for up to 3 months.
