Healthy Pumpkin Cookies

These Healthy Pumpkin Cookies are soft and chewy inside with a crisp exterior! They are made with wholesome ingredients, naturally sweetened, and packed with cozy spices for a sweet fall treat.

Pumpkin puree Egg Coconut oil Maple syrup Vanilla extract Old fashioned or quick oats Whole wheat or spelt flour Pumpkin pie spice Baking soda Salt Pumpkin seeds

What You Need

In a large bowl, whisk the eggs. Add maple syrup, pumpkin puree, vanilla, baking soda, salt, and pumpkin pie spice.

Add the melted coconut oil and whisk again.

Stir in the oats and then the flour, mixing until a thick dough forms.

Finally, add the pumpkin seeds and fold in gently to distribute them.

Use a small cookie scoop to transfer the cookie dough to the prepared sheet, flattening slightly with the back of the scoop.

Bake for 15 minutes and in batches, if needed. Remove from the oven, allow to cool for several minutes, then transfer to a cooling rack.

Store

Store in a cool dry place open. Do not wrap or place cookies in a jar. The more air, the better. Freeze cookies on a baking tray (with spaces between) until frozen solid.
