Healthy  Vanilla  Cupcakes

Moist, decadent and delicious Healthy Vanilla Cupcakes are gluten free and refined sugar free, and yet encompass everything we love about a traditional cupcake. Enjoy plain or top with healthy buttercream frosting!

Almond flour Eggs Maple syrup Greek yogurt Vanilla extract Baking powder Baking soda Salt Lemon, lime or orange zest Healthy buttercream frosting

Ingredients You Need

Preheat oven to 325 degrees F. Line 12 muffin tin with parchment paper muffin liners and spray with cooking spray. Set aside.

1. 

In a large bowl, add eggs, maple syrup, yogurt, vanilla extract, citrus zest, baking powder, baking soda and salt.

2. 

Whisk very well until combined and no lumps.

3. 

Add almond flour (make sure to level the top with knife and do not pack) and stir gently with spatula until well mixed. Batter will be runny.

4. 

Using an ice cream scoop, place batter in prepared muffin tin, flatten with spatula. Bake on middle rack for 20 minutes or until the toothpick inserted in the center comes out clean.

5. 

Remove from the oven, let cool for 15 minutes, then transfer to a wire rack to cool off completely before frosting with healthy buttercream.

6. 

Store unfrosted cupcakes loosely covered at room temperature for 2-3 days or within the refrigerator for 5-7 days. Refrigerate frosted cupcakes for 3 days.
