Healthy Ranch Dressing Plain yogurt or buttermilk Dill Garlic powder Salt and pepper Healthy Cobb Salad Arugula or salad greens Cooked chicken breast Hard boiled eggs Bacon Corn Pumpkin seeds Avocado Grape tomatoes Blue cheese Grilled vegetables

Ingredients You Need

Make the dressing: Add all your healthy ranch dressing ingredients to a jar and stir with a fork or my favorite method is to place the lid on and give it a few shakes!

Cook chicken: Use your preferred method for cooking chicken. Grilled, air fryer, baked, or leftover chicken, all work!

Cook corn: Grilled, boil on the stove, or I love Instant Pot corn on the cob in 2 minutes. Thawed previously frozen corn works, too!

Cook bacon: Pan fry in a skillet or bake in oven. Drain on paper towel. Toast pumpkin seeds in the same skillet after draining grease.

Drizzle veggies with olive oil, salt, pepper, and garlic powder to taste. Grill on medium heat, turn, and grill more.

Assemble: Place greens in first, arrange salad toppings around the bowl, and finish with a drizzle of  dressing.

Meal Prep

Layer salad in a jar: dressing, grape tomato, corn, veggies, greens, bacon, egg, seeds. Add avocado before eating. Refrigerate for up to 5 days.

Refrigerate salad without the dressing for up to 3 days. Add avocado before serving. Dressing lasts 1 week refrigerated in a jar.
