Healthy  Oatmeal  Cranberry Cookies

Soft and chewy Healthy Oatmeal Cranberry Cookies studded with bright red cranberries, cinnamon and orange zest. Made in one bowl and ready in 30 minutes, these no chill gluten free cookies are perfect for holiday dessert trays, gifting or cookie exchanges.

Almond Flour Oats  (Gluten Free if Needed) Sugar Coconut Oil or Butter Pure Vanilla Extract Eggs Baking Soda and Salt Orange Zest Cranberries  White Chocolate Chips (Optional)

Ingredients You Need

Preheat oven to 375 degrees F and line large baking sheet with unbleached parchment paper or silicone baking mat.

1. 

In a large mixing bowl, beat the eggs for a few minutes with a whisk. You can also use a mixer.

2. 

Add sugar, whisk 2 minutes. Add coconut oil, zest, vanilla, baking soda, cinnamon and salt; whisk. Stir in oats, almond flour, cranberries and white chocolate chips.

3. 

Continue to stir until all ingredients are mixed. Dough will be thicker.

4. 

Scoop dough, place on baking sheet 1" apart (cookies do not spread much) and flatten with fingers. Bake 13 minutes or until cookies turn golden brown.

5. 

Remove from oven, cool on sheet for 15 minutes. Transfer to a wire rack to cool off for another 30 minutes. Cooling prevents cookies from crumbling.

6. 

Store in a cool dry place for up to 5 days uncovered, otherwise cookies will become too soft. Freeze in an airtight container for up to 3 months.
