Healthy  Oatmeal Muffins

Start your day off right with one (or two…maybe three) Healthy Oatmeal Muffins! Gluten free, refined sugar free, and dairy free these protein packed muffins are moist, delicious and taste just like a baked bowl of oats!

Ripe bananas Milk (any) Maple syrup or honey Oil Pure vanilla extract Cinnamon Baking powder Baking soda Salt Rolled oats Oat flour

Ingredients You Need

Preheat oven to 375 degrees F, line 12 muffin tin with parchment paper liners and spray with cooking spray. Set aside.

1. 

 In a large mixing bowl, add bananas and mash with a fork or a masher. Add milk, maple syrup, oil, vanilla extract, cinnamon, baking powder, baking soda and salt, whisk.

2. 

Add oats and oat flour, stir to mix and let batter sit for 10 minutes for oats to hydrate.

Using large ice cream scoop, fill 12 openings with batter and garnish with more oats, if desired.

Bake on a middle rack for 17 minutes or until a toothpick comes out clean. Remove from the oven, let muffins cool for 5 minutes and enjoy.

Store in a glass airtight container in a cool dry place for up to 3 – 4 days or in a fridge for up to a week. Freeze up to 3 months.
