Cut avocado in half, remove the pit and scoop out the flesh with a spoon into a large bowl.
Mash avocado with a fork, add a pinch of salt and pepper, mix, taste and adjust to taste. Factor in what kind of toppings you will use.

Everything bagel avocado toast: Sprinkle everything bagel seasoning on top of mashed avocado, place a slice of tomato and top with more everything bagel seasoning.

Bruschetta avocado toast: Halved cherry tomatoes, fresh basil, red onion and garlic mixed with a drizzle of extra-virgin olive oil, balsamic vinegar, salt and pepper.
