Preheat oven to 350 degrees F. Line an 8x8-inch baking dish with unbleached parchment paper and set aside.
In a large bowl, add Greek yogurt, eggs, maple syrup, coconut oil and vanilla extract; whisk well.
In a separate bowl, combine cacao powder, oat flour, and baking soda.
Fold the flour mixture into the liquid mixture and stir until just combined. Fold in half the chocolate chips. Transfer batter to the prepared baking dish and top with remaining chocolate chips.
Bake brownies for 18-20 minutes. Remove from the oven and cool completely before slicing and serving.
You can serve brownies with fresh berries, whipped cream or some ice cream.
Notes
Store: Store in a ventilated container for 2 days in a cool dark place. Then refrigerate for up to 3 more days.
Freeze: Freeze in an airtight container for up to 3 months.
