Chop the zucchini
: First, clean and chop the zucchini. No need to peel the skin.

: Add the oil to a large pan and heat over high heat. I do this while I’m chopping the zucchini, so it’s ready to go.

: Add zucchini slices to heated pan and cook 3 minutes, stirring just a couple of times.
