This healthy Ground Turkey and Potato Skillet with broccoli makes for a nutritious, delicious, and nourishing one pan meal in around 40 minutes. It's gluten free, high fiber, high protein, and easy to make!
Preheat dutch oven or large deep skillet on medium-high heat. Add 1 tablespoon of oil, 5 garlic cloves and broccoli. Cook for 4 - 5 minutes or until garlic and broccoli get some char on each side, stir occasionally.
Drizzle with lemon juice and sprinkle with salt and pepper. Stir, transfer to a medium bowl and set aside.
Return dutch oven to medium heat and add remaining 1 tablespoon of oil. Add remaining 2 garlic cloves and onion; sauté for 2 minutes, stirring frequently. Add ground turkey and cook for 5 more minutes, stirring and breaking into pieces.
Add potatoes, chicken broth and soy sauce; stir gently to combine. Bring to a boil, cover and cook on low-medium heat for 20 minutes. Check potatoes for readiness and if necessary cook a bit longer.
Add previously cooked broccoli and green onion. Stir gently and serve hot.
Notes
Store: Refrigerate in an airtight container for up to 5 days. Reheat by simmering on low heat in the pot on the stove or in a microwave.
Freeze: I do not like freezing potatoes but if you want, freeze in an airtight container for up to 3 months. Thaw in the fridge overnight.
