Protein Fluffy Jello made healthier with plain gelatin, freeze-dried and fresh strawberries, naturally sweetened and with a boost of protein from Greek yogurt. So pretty and delicious for a healthy summer dessert!
In 8x11 baking dish, add gelatin and boiling water. Whisk until fully dissolved and set aside to cool down a bit.
In a high speed blender, add freeze dried strawberries, cold water and maple syrup. Blend until smooth. Small pieces are actually pleasant in a jello.
Pour into a square baking dish with gelatin mixture and whisk. Then add Greek yogurt and whisk until smooth. Add fresh strawberries and stir to distribute evenly.
Cover and refrigerate for 4 hours or until solid.
Garnish with dollops of whipped cream, if desired, and serve.
