Why You’ll Love This Recipe

I have been seeing pretty pink versions of protein fluffy jello on social media, and I knew I had to try! While the original version calls for sugar-free strawberry jello, I didn’t want to use that.

My fluffy jello might be higher in calories but it is loaded with naturally sweetened strawberries and maple syrup, grass-fed gelatin and Greek yogurt for a boost protein.

I am not a huge fan of jello but we all loved this creamy version and kept going for scoops after dinner! I also think the flavor possibilities are endless! And it’s perfect no bake summer dessert to bring to a cookout, pool party or any backyard gathering!

Ingredients for Protein Fluffy Jello

Fresh strawberries, freeze-dried strawberries, gelatin, cold water, boiling water, maple syrup, greek yogurt, whipped cream.
  • Gelatin: I used grass-fed gelatin but if in a pinch, you can always just buy a small packet at the store. You want it to be plain. Also do not confuse it with collagen peptides, they won’t set like gelatin powder.
  • Freeze dried strawberries: I bought 4 20 gram packs at the dollar store. They are affordable and not high in sugar. When buying, pay attention to sugar content as some are very high in sugar. If you can find no sugar added ones, like these, perfect!
  • Fresh strawberries: I tried protein fluffy jello without strawberries the first time but we really enjoyed the added fruit. You can omit or add, just make sure to use sweet and hulled berries.
  • Maple syrup: Refined sugar sweetener to sweeten the jello. Feel free to use honey.
  • Greek yogurt: Yogurt adds creaminess and protein. I used plain 2% Greek yogurt as it’s the default in my fridge. Use any but make sure it’s Greek yogurt as it’s more thick and higher in protein that regular yogurt.
  • Water: You will need boiling water to dilute the gelatin and cold water to create a sweet strawberry syrup in the blender.
  • Whipped cream: An optional topping that looks very pretty. Add it before serving otherwise it melts. Also it’s not included in nutritional calculations.

How to Make Protein Fluffy Jello

I used 8 x 11-inch glass baking dish with plastic lid and ceramic dish with plastic wrap another time.

You can also make it in 9 x 13-inch dish and serve more people but jello just want be as tall. If not adding fresh strawberries, you can get away with 8 x 8-inch dish.

Step by step process how to make protein fluffy jello.
  1. Melt the gelatin: In a dish, add boiling water and sprinkle gelatin on top. Whisk until completely dissolved, scraping off the sides. Set aside to cool off a bit while you are prepping other ingredients.
  2. Make sweet syrup: In a blender or food processor, add freeze-dried strawberries, cold water and maple syrup. Blend until smooth for more pink hue and smooth texture or leave some small chunks in for melting in every bite. Add to the dish with gelatin and whisk well.
  3. Finish the filling: Add Greek yogurt and whisk until there are no more small white lumps. Add fresh strawberries and spread them evenly. Do everything gently.
  4. Refrigerate: Cover dish with the lid or plastic wrap and refrigerate for 3-4 hours.

More Protein?

For me personally, there is a fine line between higher in protein and tasty. You can add more gelatin for more protein, but I do like jello’s more tender rather than rubbery texture. Same goes for Greek yogurt where dessert becomes less sweet. Feel free to experiment though.

Tips for Best Results

  • Whisk thoroughly: Be patient and whisk very well to dissolve the gelatin and Greek yogurt for the most possible smooth texture.
  • Freeze-dried strawberries are a must: They are the most flavorful and add the best pink hue without artificial dyes.
  • Don’t use frozen strawberries: To add into the filling instead of fresh ones. They are less sweet and will add a lot of moisture causing jello not to set properly.
  • Let it set: Jello needs time to chill. I found it was a softer firm after 3 hours, and like a true jello firm after 4 hours. Overnight is totally acceptable, I found it very firm with springy texture.
  • Half the recipe: Feel free to make 1/2 the recipe in a smaller container. That’s how I started testing it.

Variations

  • Cottage cheese: Instead of Greek yogurt, you can blend cottage and add it in. Hello fluffy jello with cheesecake vibes!
  • Less sugar: Add less maple syrup, skip fresh strawberries or use your favorite natural sugar free alternative like monk fruit. I would whisk it with boiling water to dissolve then.
  • Fruit juice: I was thinking to try it with any fruit juice but opted out for more natural version. However, it’s not a bad option too. In this case, I would heat up 1 cup of juice to dissolve the gelatin first and then use remaining 2 cups of cold juice.
  • Orange creamsicle: Use orange juice, vanilla Greek yogurt and mandarin segments.
  • Other flavors: Pick any freeze-dried fruit variety like blueberries, mango, bananas, peaches and use the same flavor of fresh fruit as a filling.
  • More protein: You can add another 1 cup of Greek yogurt or add some whey protein powder.

How to Store and Serve

Fluffy jello lasts in the fridge for about 5 days. Keep it tightly covered and serve yourself a few spoonfuls for after-dinner healthy dessert.

Add whipped cream each time fresh and not to the entire dish as it spreads out quickly. We’ve been enjoying it for 3 days straight after dinner and couldn’t get enough!

Because of added strawberries this dessert is pretty on its own. For serving at a party, I would set out a can of whipped cream next to it and everyone can add a fresh dollop to their plate.

  • In a high speed blender, add freeze dried strawberries, cold water and maple syrup. Blend until smooth. Small pieces are actually pleasant in a jello.
  • Pour into a square baking dish with gelatin mixture and whisk. Then add Greek yogurt and whisk until smooth. Add fresh strawberries and stir to distribute evenly.
  • Cover and refrigerate for 4 hours or until solid.
  • Garnish with dollops of whipped cream, if desired, and serve.

  5. Can this recipe be made without dried berries and maple syrup. Could it just have fresh berries and Agave nectar instead?

    1. If you use fresh berries with the Jell-O, the Jell-O might not set. Freeze dried strawberries add a lot of flavour and colour without changing the texture. Agave nectar will work instead of Maple syrup.
