Healthy Chicken Lettuce Wraps

These Healthy Chicken Lettuce Wraps are a low carb, quick, and easy appetizer or main combining chicken with veggies, cashews, and a healthy homemade teriyaki sauce spooned over crisp lettuce leaves for a flavor packed meal.

Chicken breast Onion Garlic Ginger Zucchini  Bell pepper Cashews Green onion Cold water Soy sauce Maple syrup Rice vinegar Cornstarch Butter lettuce Oil

What You Need

Prepare ingredients: Dice chicken, chop onion, mince garlic and ginger, and dice veggies. Separate leaves from head of lettuce, then give them a rinse.

Toast cashews: Preheat a large non-stick skillet over medium heat and add cashews, frying until lightly toasted and fragrant. Set aside.

Sauté ingredients: Return skillet to heat, add oil. Add onion, garlic, and ginger, and cook for one minute. Add chicken to pan and cook for 10 minutes, stirring occasionally

Combine dressing ingredients, add to chicken along with zucchini and bell pepper; cook for 1 minute or until sauce has thickened. Stir in cashews  and green onions.

Serve chicken lettuce wraps immediately. To assemble,  use 2-3 stacked lettuce leaves and spoon desired amount of filling on top.

Store

Refrigerate filling in airtight container up to 3 days. Reheat on skillet before assembling lettuce wraps. Freeze chicken filling up to 3 months.
