Healthy Brown Rice Pudding For a Week

We are back from Mexico and it feels so good to be home. What feels even better is my own kitchen where knives are sharp, pots are stainless steel and stove is gas. Oh, how I have missed my kitchen! No place like home, even without an ocean view my home is so clean, new and beautiful. Now that 10 loads of laundry are done and put away, fridge is stocked and everyone is back into a routine, I can finally cook creatively again. As I was staring at…

Pina Colada Protein Milkshake

Let me tell you how I envision my healthy path in 2016 since we started talking about yours. I really upped my game in a smoothie department and I’m shocked how fun it is to whip up different smoothies! Like this pina colada protein milkshake with Nature’s Path Coconut Chia granola, frozen pineapple chunks and Greek yogurt…So-so-so good and who would think to add granola to a smoothie, right?! But it totally works making one heck of a healthy milkshake high in fat, fibre and protein without the protein powder.

Chocolate Banana Chia Pudding

I posted this banana chia pudding a few years back but pictures and recipe itself could have been better. A radio host said “January is like Monday of the year” while we were returning from a day of skiing a few days ago. So true, because I keep making and craving chia pudding. You definitely won’t find me doing it on a weekend. On a weekend I recover from a crazy week in the kitchen and we survive on Alex’s cooking and organic quick prep Costco finds (frozen pre-cut…

Healthy Iced Coffee

“Hello. I’m coffee. Nice to meet you. I’m Olena’s newest addiction.” Well, not that new but since the baby #2 sleepless nights “yeeees” and “yeeees” and “yeeees”. Luckily those nights are gone and are NEVER coming back! Until those nights I never touched coffee, needless to say I would never create an iced coffee recipe. Nowadays, I would be willing to brew fresh ground coffee every morning just to make my house smell like Starbucks or my Italian neighbours’ house. On a hot summer day, this glass of healthy…

Papaya Chia Pudding

High Protein & No Added Sugar Papaya Chia Seed Pudding Recipe

No added sugar, vegan, gluten free and high in protein simple & quick papaya pudding recipe with chia seeds. Prep time = 2 minutes, cooking time = 0 mins. Gotta love that! Chia seed is the new superfood that is sold in any grocery store and is recommended by many athletes and other health authorities. There is also a belief chia seeds help in weight loss but studies remain inconclusive. According to the USDA, a 1 oz serving of chia seeds contains 9 g of fat, 11 g of fiber and 4 g…

Light Almond Eggnog Latte

Eggnog, candy canes (least of my favourites), Glade spruce and apple cinnamon candles (love these on sale – I’m cheap), brandy beans (not everyone knows those but I have a special relationship with them), gingerbread man and shortbread cookies…Christmas is here! Hard to believe. It’s like a hurricane – comes unexpected although everyone knows it’s coming, makes a mess and leaves us to recover. And let me guess, 1 out of 3 has a New Year’s resolution to…to…to go to the gym! That’s right.:)
