Lemon Mint Dressing

I would be lying if I said I meant this dream-of-my-past-2-months lemon mint dressing to come out this colour. Growing up in Ukraine I remember eating this colour mashed split peas with liver patties at government subsidized daycare. I hated daycare only for that reason and will never forget that meal! Mushroom Vinaigrette

As weird as mushroom vinaigrette may sound, it was one of the most delicious salad dressings I ever made! It is not made with actual mushrooms (that I think would be weird) but rather a liquid coming out from mushrooms during sautéing. Aha, the one you drain. Why did I do that before?! You can also use organic mushroom broth.

Vegan Kale Pesto

Lots of foliage in this vegan kale pesto to kick off 2016 right! And it is vegan not because I’m vegan but because I do not like Parmesan cheese in a pesto. I would rather sprinkle it on top of pesto noodles. And eating less dairy and more vegetables is a plus anyways. Pesto sauce is a tough food item in my clean eating books.
